My favorite Mexican dish. When I find a version I especially like in a restaurant*, I always ask for the sauce recipe. And usually I need a notebook (instead of a napkin) to write it down because of the number of ingredients and steps.

 

So I stick to eating it out. Good luck @Reconnaissant !

 

*Might as well give a plug to my favorite. Haven't been there in over a year due to pandemic. It's 35 miles from home so hard to justify takeout. El Tapatio  1700 Philadelphia Pike  Wilmington DE   I bet our President Elect has eaten there.
