If you live in the Chcago area, as I do, you may have seen a big article today in local paper, Daily Herald, about Asparagus. Here are some tips mentioned and recipe also.
Tips.....Be picky about your asparagus. Choose medium-thick spears that are firm, and look for tips that are tight. Wrinkled spears and blossoming tips are signs of age. Cut or break off woody bottoms....spears usually have a natural breaking point...and carefully peel away the skin up to an inch or two below the tip.
Asparagus Pilaf
In skillet cook two chopped shallots in 3 tablespoons butter. Add 1 bunch of asparagus (chopped small) and 1/2 cup chopped pecans. Cook until tender and lightly browned. Add 2 cups cooked rice and 1 tablespoon chopped fresh thyme. Season with salt and pepper.

Thanks, ECBG, it does sound tasty. I think this is a good way to slip in asparagus and see what family thinks even if they don't like asparagus. Worth a try even if I end up eating it all....ha!

@walker, I live in the Chicagoland area and really didn't know much about asparagus until I happened to catch a Steve Dahl show and he (coming from California) clued me in on what is good asparagus . . . great memory, thank you for this!

Thanks, mtc, I don't usually cook asparagus because it is not a favorite here, but I like it. I learned a lot from article. There was even a recipe for Asparagus Bruchetta and others. Learn new things everyday.

Yum! thanks for this! I love asparagus..
My tip: when you break off the ends, save them in the freezer and use them when making soup..I like to do cream of asparagus utilizing these, when cooked and pureed, they are pretty tasty!
But, you can use them in just about any soup or stock you might make

The best asparagus I have had is fresh asparagus roasted with olive oil and sea salt on 425 for 10 to 15 minutes.
I love recipes that are simple, economical, healthy, and delicious.
