Asparagus is at a great price here and so good! What are your favorite ways to use it? I usually just roast it and sometimes top with poached eggs for a light dinner. Last night I made my usual pasta with garlic and oil, but then also added in shrimp and asparagus with some lemon zest. So good!

I've been paying around $1.50/lb., which is great. I bought an asparagus steamer ten years ago and use it frequently. That and an omelette pan are my only single purpose kitchen tools. Otherwise I drizzle with olive oil, cover with grated cheese and bake at 325 until tender.

I found this stuff and it is so good and easy. Just mix in a little water with package mix in a pan and add asparagus. Cook for about 10 minutes and you're done. My husband loves it and would probably eat it every night.

Oven roasted is my favorite way, but if I want to speed things up I’ll cut the asparagus up and sauté it. Sometimes I’ll add garlic, sometimes a sprinkle of Parmesan cheese. We had roasted asparagus last night with our steak. It’s one of our go to veggies.

A very light coating of oil, sprinkle fresh parm cheese and pepper. Cook 10 minutes at 400. Lightly sprinkle a bit of lemon juice when they're done.

Love grilled asparagus and roasted yellow crook neck squash with onions in a little pasta with pesto and a little parm.

Asparagus Soup serves 6
2 tablespoons olive oil
1 large Vidalia onion, diced (or any mild onion)
1 large leek, slice white and light green parts only
1 pound asparagus, trim and cut into 1-2 inch pieces
1 pound russet potatoes, diced into 1-inch cubes
4-5 cups low sodium chicken broth
1 teaspoon kosher salt
2 teaspoons fresh thyme, chopped - optional
2 teaspoons fresh marjoram, chopped - optional
If you wish the soup to be even creamier you can add in 1/4 cup of greek yogurt (or half and half or heavy cream) just before pureeing.
Bunch of fresh chives, sliced thin and high quality olive oil to drizzle over top.

Shrimp and Asparagus over Penne
Cook: 8 oz penne in boiling water.
Saute: in 2 Tbsp olive oil
1 clove garlic
8 oz asparagus
(cut into 1/4" pieces) Cook stalks 3 mins, add tips, cook another 3 mins.
Add: 1 fresh tomato chopped small
Cover and set aside.
Saute in: 2 Tbsp olive oil
1 clove garlic and cook until golden. Do not burn!
Add: 8 shrimp (peeled and deveined) and cook until pink.
Add veggies to shrimp. Salt and pepper to taste.
Pour wine over all if desired. (Great without it)
Serve over a plate of cooked penne. Beautiful and delicious dish!
It is easier to make if you have everything out and ready before you even start cooking. Everything moves rather quickly.

Oh man up until a year ago (pre-pandemic) I was able to get organic frozen asparagus at Whole Foods. So easy to prepare, I made it every day---I'm not kidding.
I'd just saute with a little olive oil and sliced garlic.

We love fresh asparagus, but not overly cooked. I usually just add a tad of water and microwave medium spears for 3 minutes or so.....then drain the water and drizzle with olive oil, a little minced garlic,and salt & pepper. Simple, but so good. I've used asparagus in quiche and soup, but thought that the flavor was sort of lost. I like it all on its own....a big slice of garlic cheese bread and a plate of asparagus is a great meal for me!
