To answer the question, "What the heck are they?"...

mi·cro·greens
ˈmīkrōˌɡrēnz/
noun
plural noun: microgreens; plural noun: micro-greens
  1. the shoots of salad vegetables such as arugula, Swiss chard, mustard, beetroot, etc., picked just after the first leaves have developed.

    Wiki says:

A microgreen is a young vegetable green that is used both as a visual and flavor component or ingredient primarily in fine dining restaurants. Fine dining chefs use microgreens to enhance the attractiveness and taste of their dishes with their delicate textures and distinctive flavors. Smaller than “baby greens,” and harvested later than sprouts, microgreens can provide a variety of leaf flavors, such as sweet and spicy. They are also known for their various colors and textures. Among upscale markets, they are now considered a specialty genre of greens that are good for garnishing salads, soups, plates, and sandwiches.

Re: Are You Eating Microgreens?

I see A LOT of recipes with microgreens added to top salads, sandwiches, pasta, many foods.

My daughter picked them up for me at Trader Joes and I love them  So far, I've eaten them plain but you can also drizzle them with EVOO or a little dressing.

No.  Food fad of the day.  I'll let them mature then eat them.

Re: Are You Eating Microgreens?

I grow them and sell them from my farmstand, they are really catching on. Arugula is much tastier as a micro green that full grown.  Actually micro greens have been around for awhile, we grew them years ago when I worked for a share of produce on a local farm.

The food "fad" of microgreens has been big since the 1980s, even bigger in the 1990s.  I don't think that qualifies as a fad since they are stronger than ever.

Maturing doesn't give you the powerful kick of nutrients, that's the point.

You are right @blackhole99  They have been around for a long while.

It's wonderful that you are growing them!  They are so much easier to find nowadays.    Love arugula, I mix half and half, fresh spinach leaves and fresh baby arugula leaves , or just arugula for me.

I finally got DH to put a bunch on his sandwiches, it took him a long time to realize he liked them Woman Frustrated

I am fine without them in my diet.  And yes, they have been around for a relatively long time, and they come in go in the fad food world, waxing and waneing in popularity.  I don't care for them, and have a good diet without them.  They have a taste similar to alfalfa hay that I don't care for.

Re: Are You Eating Microgreens?

Surely they would be good for you but I think they are used mainly for looks.  They are pretty!

You would get the same nutrients from regular greens.
