I see A LOT of recipes with microgreens added to top salads, sandwiches, pasta, many foods.
My daughter picked them up for me at Trader Joes and I love them So far, I've eaten them plain but you can also drizzle them with EVOO or a little dressing.

I grow them and sell them from my farmstand, they are really catching on. Arugula is much tastier as a micro green that full grown. Actually micro greens have been around for awhile, we grew them years ago when I worked for a share of produce on a local farm.

The food "fad" of microgreens has been big since the 1980s, even bigger in the 1990s. I don't think that qualifies as a fad since they are stronger than ever.
Maturing doesn't give you the powerful kick of nutrients, that's the point.

You are right @blackhole99 They have been around for a long while.
It's wonderful that you are growing them! They are so much easier to find nowadays. Love arugula, I mix half and half, fresh spinach leaves and fresh baby arugula leaves , or just arugula for me.
I finally got DH to put a bunch on his sandwiches, it took him a long time to realize he liked them ![]()

I am fine without them in my diet. And yes, they have been around for a relatively long time, and they come in go in the fad food world, waxing and waneing in popularity. I don't care for them, and have a good diet without them. They have a taste similar to alfalfa hay that I don't care for.

Surely they would be good for you but I think they are used mainly for looks. They are pretty!
You would get the same nutrients from regular greens.
