I found this recipe n TikTok and it is really tasty.

 

3 to 4 Tbs, apricot preserves ( warmed for 15 sec. In the microwave )

1 teasp. Dijon mustard

2 Tbs. Apple cider vinegar

1/4 cup olive oil

salt and pepper to taste 

some crushed red pepper flakes ( omit if you don't want a little heat )

 

She usd this over arugula, romaine, and pear salad, but it is good on any green salad.  Enjoy !

@QVCkitty1 this Apricot Vinegrette recipe sounds really delicious to me! This would be really good woth a sald with chicken in it or even a sweet and sour dipping or basting sauce of sorts. Thank you so much for posting.

i am not a huge apricot fan, but this recipe sounds good. i bet you could easily use  other jams/jellies/preserves. thanks for sharing!

Sounds delicious.  I think I would like this as a dipping sauce for either egg rolls, or potstickers.

and use orange marmalade instead.

It would make a nice marinade for pork or chicken.

@QVCkitty1  Thanks for sharing! The preserves would let you skip the honey if you like a hint of sweetness w/ more bitter greens!

And I agree with RollTide, it would make a great marinade too.

 

I have everything together to make this today.

 

I'm thinking a little bit of garlic & thinly sliced scallions might be nice additions.

Thanks for posting the recipe!

 

My only slight suggestion would be to maybe use white pepper vs. black pepper. Only for aesthetics. I wasn't thinking & grabbed the black so it's not quite as pretty as it could be but it sure tastes good!!!

 

I made mine a bit on the thicker side so I am going to have it on grilled shrimp tonight.
