Apple Cake ( Bake in Bundt Pan)

Prepare Bundt pan by greasing with Crisco and lighty sprinkle with flour.

3 eggs

2 c sugar

1 1/4 c Crisco Oil

1/4 c orange juice

3 c all-purpose flour

1/4 t salt

1 t baking soda

1 t cinnamon

1/2 t vanilla

1 c chopped nuts

2 c chopped apple ( 2 med.)

Beat eggs in electric mixer. Add sugar and beat well.

Add oil, orange juice, and mix well.

Sift flour and measure 3 cups into large metal bowl.

Add salt, baking soda, cinnamon to flour and stir.

Sift flour mixture again.

Add flour mixture, a small amount at a time to the oil mixture.

Beat well for 1 minute at medium speed. Add vanilla and mix again.

Stir in apples and nuts by hand.

Bake at 325* for 1- 1/2 hours. Leave in pan and pour the following topping over it while it is hot.

1 stick butter

1 t baking soda

1 c sugar

1/2 c buttermilk

Melt the butter slowly and add the other ingredients. Bring to a boil. Remove from heat. Pour over cake. Leave cake in pan overnight. To remove from pan, place pan on warm oven door for a few minutes. Then invert.

This was one of my Dad's favorite cakes. The recipe came from the Food Service Class, Scotland High School back in the 1980's.
