I have seen some really new ways to use this vegie, but they all look labor intensive, lol.

I suggest Ree Drummond's (Food Network's Pioneer Woman) cauliflower soup. It's DELICIOUS, easy, fast, and the recipe makes a big pot - plenty for leftovers. I find myself craving this soup. I made it tonight, actually. I skip the sour cream step, myself. It's rich and yummy without.

This is absolutely delicious@ I got it from a cookbook from the Junior League somewhere in NY I guess twenty five years ago!
Cauliflower Curry
1 lg cauliflower broken into flowerets
2 T water
1 can Cream Of Chicken soup
1 C sharp cheddar cheese
1/3 C mayonaise
1 tsp. curry powder
2 tsp. melted butter
1/4 C bread crumbs
In 9 x 9 casserole with lid, cover cauliflower flowerets with the water and microwave 7 minutes.
Drain in colendar
Dry and spray casserole
Return cauliflower to casserole and pour over soup, cheese, mayo, cnd curry powder. Fold to combine.
Melt butter and add bread crumbs. Sprinkle over mixture.
Microwave 3 minutes.

I just cook it and drizzle some feta/dill dressing over it on my plate. Delicious and very healthy!

Ever used it in place of potatoes? Makes a good potatoe salad.

My favorite way is to simply roast it with a small amount of olive oil and chopped garlic
cut into flowerets toss with a couple of teaspoons olive oil and some chopped garli, pepper and lay on a foil lined baking pan in single layer. Bake in 425 oven until slightly brown and soft

I just made some in the air fryer but you could also pop it into an oven.
I dropped the florets I had steamed for a few minutes into an egg wash and then coated them in bread crumbs (I used panko), parmesan and whatever spices you like.
Pop it in the oven and roast until brown, very good!

ECBG, does this taste really "mustard-y"? I have had foods with curry in the past & they were overpoweringly "mustard-y". (Is that a word LOL???).
It's funny, I like mustard but NOT warm mustard.
