I am not here to discuss my needs, but I am increasingly becoming aware I am not the only one.

In my travels on the net, and reading, I have discovered two flours that I never heard of.

Many of these specialty flours have nuances that you may only learn from reading, but I like creating!

I thought it would be fun and helpful if we talk about alternative ingredients.... I think the flours are a great place to start, so without further ado...

TIGER NUTS/ TIGER NUT FLOUR

THIS IS NOT A NUT!!! It's a tuber...

Organic, gluten free and kosher

NUTRITION IN A NUT SHELL

1/4 c serving size, 150 calls/ 80 fat calls

TOTAL CARB 19g

Fiber: 10g

   Sugars: 6 g

Protein: 2 g

On my package, it has a chocolate cookie recipe that has no unusual ingredients. No eggs or oils are used: it calls for 3 Tb of water for 1/2 cup tiger nut flour used in the recipe.

I found out about this flour while looking for a Paleo recipe.

Please contribute-if you suddenly have a restriction, or already have one and are always looking for alternatives, maybe we can up with ideas or finds we have made.
