This is my first time posting on this thread.

 

DH and I are trying to watch our carbs and I'm having a hard time coming up with ideas.

 

I bought some almond flour to make "mug bread" but wasn't overly impressed. Now I have a relatively large bag of almond flour and am now looking for ideas on how to use it (because it was pretty expensive) but in easy recipes, as I'm not that into cooking.  (That mug bread was right up my alley in terms of difficulty.)

@Texasmouse  I like using the 90 sec. mug bread batter to make mini waffles. You can add sweetener or make them savory.  I also use almond flour is my keto baking for pizza crust, cheesecake crust, pie crust, cakes, cupcakes, cookies.  Last night I made cauliflower buffalo “wings” with almond flour as the breading.  There were really good.  Almond flour is a common ingredient for those who follow the keto way of eating.  You might check out the Keto Sharing thread in the Wellness forum, to see if there are any recipes that appeal to you. 

 

ETA - Costco is the best place to buy almond flour.

Almond flour is expensive. I use it in my homemade morning muffins. I use ~a quarter cup when the recipe calls for 2 cups unbleached flour. I'm not concerned about carbs, so ignore this message if it doesn't suit your way of life.

@firestorm  That was helpful to know 1/4 cup = 2 cups unbleached flour. I haven't had any flour in my kitchen in many years. This gives me the incentive to try almond flour for favorite things that I've avoided since diagnosed as a diabetic eons ago. My A1C's have been at 5.7 for several years and I'm confident homemade chocolate & white chip cookies would be a heavenly treat again! I simply gave up all sugars and flours at that time and didn't really miss them. Now? I'm beginning to want good dark chocolates after each dinner, again! Heart

We've been eating  low carb at our house for years and almond flour is a staple for us. This is a really quick, easy, one pan dessert that I've made over and over. 

Low Carb Browned Butter Chocolate Chip Skillet Cookie

Ingredients
  • 1/2 cup butter
  • 1 large egg*
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons brown sugar substitute/sweetener (or coconut sugar if not strict KETO)
  • 1/4 cup natural granulated sweetener (Swerve Granular or Natvia Baking Blend)**
  • 2 cups almond flour***
  • 1/2 teaspoon sea salt
  • 1/2 cup sugar free chocolate chips (Lily's Dark Chocolate Premium but you can use Enjoy Life chocolate chips for a dairy free option)
Instructions
  • Preheat oven to 350°F (176°C). Heat the butter in a 9-inch cast iron skillet over high heat until bubbling. Reduce heat down to low; cover pan (optional but prevents butter spitting everywhere), and continue to cook while stirring occasionally until the butter begins to brown. (Be careful when lifting the lid off the pan as the butter may spit.) Once browned, remove from heat and allow to cool for about 5 minutes.
  • While butter is cooling, whisk together the egg and vanilla extract. Add the sugar and sweetener and whisk again until combined. Add the butter once it has cooled and mix well.
  • Sift in the almond flour (press any lumps gently over the sieve to sift quicker); add the salt and half the chocolate chips; mix through gently until the batter is well combined and creamy. It will be a little thicker than cookie dough. Spoon batter into skillet; top with remaining chocolate chips.
  • Bake for 25-30 minutes or until set on the top when pressed lightly and a toothpick inserted into the centre of the cookie comes out clean.
  • Serve with No Sugar ice cream or frozen yogurt and enjoy!
Notes
*Replace egg with 1 flax egg for VEGAN substitute
 
**Natural sweetener can be subbed with coconut sugar or regular white sugar if you like. You will need to recalculate nutritional macros.
 
***Make sure you use fine almond FLOUR (light yellow in colour) and NOT almond MEAL.
 
If you don't have a cast iron skillet, you can brown the butter in a normal pan and use a pie dish to bake the cookie.

The almond flour is expensive.  I keep it in the fridge or freezer.

@GenXmuse  This is very good! Made it this afternoon, but rather than the sugar substitudes I used dark brown sugar, a smaller amount of white sugar and a combo of dark and white chocolate chips.

I just checked at the King Arthur Flour website for recipes using Almond Flour.  There seemed to be quite a few.  

Go to kingarthurbaking.com; go to the recipe section.   Where page says to search baker tested recipes, type in 'Almond Flour'; hit enter and lots of recipes will come up.  

 

Hope this gives you some ideas.
