I've had this recipe a long time. I have no idea where it came from, but it really is good and makes a great side dish.
All-Time Favorite Mushroom Casserole
3-4 lb mushrooms
1/4 lb butter
3/4 c water
16-oz pkg Pepperidge Farm Stuffing mix or 3 boxes Stove Top Stuff Mix
chopped onion and celery, opt
3/4 lb sharp cheddar, shredded, or 3/4 lb mozzarella*, grated or 16-oz Velveeta, sliced
1 1/4 c half and half
Wash, slice, and cook mushrooms briefly in small amount of water. Drain. Melt butter in 3/4 c water, then combine with stuffing mix, adding celery and onion if desired. Stuffing will be slightly dry. In greased 9x13-inch casserole, layer mushrooms, cheese, then stuffing. Repeat, ending with stuffing. Dot with butter. Casserole may be made ahead and refrigerated until cooking time. Just before cooking, pour over the half and half. Bake at 350 deg F for 30 minutes.
*I use mozzarella.
