I have had this recipe hanging around for quite a while.  I finally tried it last night to take to a potluck.  It got rave reviews and was a definite keeper. 

 

1 10 oz bag spring mix with spinach
1 Honeycrisp apple, thinly sliced
1/2 cup crumbled blue cheese
1/2 cup whole pecans, toasted
1/2 cup cooked crumbled bacon
1/2 cup dried cranberries
1 cup cubed red garnet yam

 

Dressing:
1/4 cup apple cider vinegar
3/4 cup olive oil
2 T maple syrup
1 T dijon mustard
1 T fresh lemon juice
1/2 t salt
1/4 t pepper

 

Preheat oven to 400.

 

Toss cubed yams with 1 T olive oil.  Spread on foil lined baking sheet.  Bake for 20-25 minutes.  Cool.

 

Combine all dressing ingredients and chill.  

 

In a large salad bowl add greens and toss with a small amount of dressing.  Add sliced apple, chilled sweet potato, cranberries and pecans.  Add a little more dressing and toss again.  Sprinkle the bacon and blue cheese on top.  

 

I had leftover dressing so the next time I make it I think I will cut it in half.

@DiAnne  your salad sounds delish, but OMG it makes a full cup of dressing.  way to much. i like your idea, cut the dressing in half. can't wait to try it.

The recipe sounds delicious!  I like anything with bacon and blue cheese.

@DiAnne , That dressing sounds so good, I think it would be good on a lot of green salads. I think I'll make the whole recipe.

Love this recipe (i love a chopped apple in my salads). I'm sure this was a hit. I would think the yam step could be skipped and any balsamic dressing could be used if you were short on time and would still be delish. Thank you for posting, its a good one 😊
