Good morning recipe friends and welcome to the August Recipe Game!

 

My goodness what a summer it has been (Corn Sweats!) but today is a beautiful morning for which I am grateful.  Let us focus on all the good things in life including great recipes of which you are always so kind to share including our friend @vabreeze who gave us this delicious and cool summer dessert:

 

NO BAKE APPLE DELIGHT
1½ cups graham cracker crumbs -- set aside 2 TBS
1 tsp ground cinnamon
6 - 8 TBS melted butter
8 oz block cream cheese,
softened
½ cup granulated sugar
8 oz tub whipped topping
21 oz can apple pie filling
1 tsp apple pie spice or to taste


Mix cracker crumbs ===> butter together in a bowl.

Transfer buttered crumbs to 8X8 baking dish; spread evenly over dish and firmly tamp down to make crumb layer. Set aside.

Beat cream cheese and sugar with electric mixer until well blended.

Fold in Cool Whip.

Dollop HALF of Cool Whip mixture over crumb crust layer; delicately spread to evenly cover crust.

EITHER pour pie filling into a bowl and mash with potato masher into small bite-size chunks OR cut apple filling in its can w/ knife into diced, bite-size pieces.

Add apple pie spice to filling.
···my spice blend contains vanilla--- Optional: if yours doesn't, I suggest adding about 1/4 tsp to pie filling for added flavor···

Dollop pie filling over Cool Whip mixture layer; gently spread out without disturbong Cool Whip layer.

Dollop remaining Cool Whip mixture over pie filling layer; spread evenly to cover.

Sprinkle reserved 2 TBS crumbs over top of this dessert
···When I have it on hand, I also top with caramel sauce···

Refrigerate 4 hours to overnight before cutting (easily can be cut into 9 square/rectangular servings).

Next Ingredient---- ROASTED RED PEPPERS or PEPPADEWS (sweet piquanté peppers)

Found this recipe and tried it!  Winner! 

 

Easy to half or use your own amounts. I made 1. 

 

Could use ground beef!  Quick & easy!

 

I used a bag of roasted Peppers & Onions from the freezer!

 

Allow frozen veggies to thaw before using!

Philly Cheesesteak Recipe with Peppers and Onions

 
This easy Philly Cheesesteak Recipe is the ultimate game day fare! Tender bites of steak, sautéed peppers and onions, and melted provolone cheese are all cooked up in one skillet and loaded on toasted hoagie rolls.

Ingredients

 

4 tablespoons oil divided (or as needed)

1 sweet yellow onion halved and thinly sliced 

red bell pepper thinly sliced

1 green bell pepper thinly sliced

OR bag of frozen Roasted Peppers & Onions

2 to 3 pounds petite sirloin thinly sliced sirloin
OR 1 pkg Steak-Ums (1.5 lb per pkg)

 

1 teaspoon Seasoned Salt 
1 teaspoon garlic pepper 

  • 8 hoagie rolls
  • 6 tablespoons softened butter
  • 7 ounces sliced Provolone cheese 

Instructions

    • Add 2 tablespoons vegetable oil to a large, deep (14-inch) sauté pan  and place over MEDIUM-LOW heat. Add onion and bell peppers. Allow to cook, stirring occasionally, until very tender.
    • If they are beginning to brown, turn the heat under the skillet down a bit. (While the veggies are cooking, prepare the steak) OR use Steak-Ums, returning to stir veggies every now and then.

  • When the veggies are tender, transfer them to a dish and return the skillet to the heat. Add additional oil and place over MEDIUM-HIGH heat. Add chopped steak (Steak-Ums) in pieces and cook, stirring frequently, for about 4 to 5 minutes, or until lightly browned. Season with ¾ teaspoon seasoned salt and ½ teaspoon garlic pepper while cooking.  When beef is lightly browned, add veggies back to pan.  Mix well.

 

  • Preheat oven to 400 degrees F.
  • Split open the hoagies rolls but do not separate them. Spread them with the softened butter and place them on a baking sheet. Transfer the baking sheet to the oven and bake for 3 to 5 minutes or until lightly toasted. 
  • I USED TOASTER OVEN on Toast!  
  • Too hot for using thhe oven!

  • Drain off all of the juices from the pan and return to the stove. Add back all of the steak and the onions and peppers.
  • Place 7 provolone slices over the mixture in a circle and cover the pan. Cook on MEDIUM until cheese melts, about 4 to 5 minutes, then stir and use spatula to transfer to the toasted sandwich rolls.  Enjoy!

Deluxe HOT DOGS and Beans

 

2 cans (28 oz) pork and beans

1 lb. Bacon

1 1/2 lbs. ground beef

1 pkg. HOT DOGS, sliced

1 cup light brown sugar

1 cup BBQ Sauce

1 pkg. dry onion soup

 

Brown and drain the ground beef.  Cook and drain bacon then crumble.  Mix all ingredients together and put in a large casserole dish.  Bake at 350 for one hour, uncovered.

 

(This makes a lot but recipe could be cut in half.)

 

NEXT INGREDIENT .... Any MUSTARD...regular, Dijon, etc.

                                     or Dry Mustard

This is one of my FAV dressings:

 

Maple Dijon Vinaigrette

 

2 tablespoons maple syrup

1 tablespoon Dijon mustard 

2 tablespoons apple cider vinegar 

1/3 cup extra-virgin olive oil 

Salt and freshly cracked black pepper 

10 cups mixed salad greens 

 

Directions

  1. Whisk together the maple syrup, mustard and cider vinegar in a large bowl. Whisk in the olive oil in a slow, steady stream until the vinaigrette emulsifies and thickens.
  2. Toss the mixed greens with the vinaigrette and serve.

Blueberry Crunch

 

1 or 2 bags frozen BLUEBERRIES 

1/2 cup white sugar

1/2 teaspoon cinnamon 

 

Topping:

1/2 cup oatmeal 

1/2 cup flour 

1/2 cup packed brown sugar

1/4 cup chopped walnuts

About 3/4 cube butter

 

Mix frozen blueberries with sugar and cinnamon.

 

Place in 8" square baking pan as evenly as possible. Mix topping in separate bowl except butter.

 

Sprinkle topping over berries. Thinly slice butter and place evenly over berries topped with flour mixture. Bake at 350 degrees for 1 hour.

@kelshar .... let me be the second to welcome you here...good recipe....hope to see you post again.

 

This recipe is easy and good...make as many as you need.

I am sorry I do not have exact measurements but it was shared by a friend....just eyeball it.  (depends on size of salmon portions) 😉

 

Salmon in Foil

 

One piece of salmon on one piece of foil...large enough to wrap.  On top of salmon, place about 1-2 tablespoons of TERIYAKI SAUCE...next sprinkle brown sugar...followed by little honey, then slice of butter and one or two lemon slices on top.  Wrap salmon up in foil.  Place on grill for 18 minutes OR 18-20 minutes in oven at 400 (425 if thick salmon).  Makes good sauce served over Jasmine rice or other rice.  You can sprinkle sliced green onions on top before serving.

I've never seen a "recipe" for these but the Lady who told me about them called them, "Manna from Heaven!"  

 

Try them and you will understand why!

Cut potatoes in 1/2" cubes and chop onions a bit smaller.

 

Boil together until the potatoes are tender.

 

Drain but not completely.  Add Lowrey's Seasoned Salt and black pepper and lots of butter!

 

Stir until a bit "creamy."  Add more potato water if needed!

You will know!  Do not stir until you have "mashed" potatoes.  You want Cubed potatoes in a creaminess!

 

Vague?  Send questions.  Do try these!  She was RIGHT!

Granny’s Southern-Fried Okra

½ cup all-purpose flour

¼ cup cornmeal

¾ teaspoon salt

¼ teaspoon ground black pepper

¼ teaspoon garlic powder

¼ teaspoon onion powder

1 egg white

1 pound fresh okra, sliced into ½-inch thick slices

Vegetable oil (for frying)

 

In a medium bowl, whisk together flour, cornmeal, salt, ground black pepper, garlic powder & onion powder.  Set aside.

In another medium bowl, beat egg white until frothy & bubbly.

Add okra slices to egg white, gently stirring until all pieces are well-coated.  Transfer coated pieces to bowl with flour mixture, dredging until all pieces are well-coated.

Add oil to a large, heavy-bottomed skillet (to about 1-inch depth) & heat until very hot.  Carefully add coated okra pieces to hot oil - in batches, if needed - and cook until golden-brown.  Remove from skillet to paper towels to drain.  Serve hot!

Easy salsa chicken.  I make this, even on vacation.  Very easy and it's done in a crockpot!

 

Salsa Chicken

 

6 frozen chicken breasts

1 large jar salsa (I use medium)

2 cups cheddar cheese (sometimes I use pepper jack and cheddar). 

1 can (15 oz) black beans (drained)

1 can whole kernel corn (drained)

8 oz sour cream

 

Mix and cook on high about 4 hours.  I usually cook it on low for 6+ hours.  I shred the chicken and remix.  So easy, so good!  You can serve over rice, but we eat it with a side vegetable and some Tostito scoops!  I have even put leftovers on a salad.  Enjoy.
