Fairly quick, easy, and delicious (I think) ZUCCHINI Casserole......

 

3 cups ZUCCHINI, cut in bite size pieces

2 carrots, shredded (optional)

1 small onion, diced

1 can Cream of Chicken soup

1/2 cup sour cream

1/2 packaged Pepperidge Farm Stuffing (I prefer Herb  

       Classic Stuffing not cube type)

1/3 cup butter, melted

 

Lightly cook ZUCCHINI and drain.  Mix stuffing with butter.  Mix all ingredients with 1/2 of the stuffing.  Put in

2 quart casserole and top with rest of stuffing.  Bake at 350 for 25 minutes, uncovered.

@walker   I almost posted this for Yellow Squash.  I'm sure it is just as good using Zucchini!

@Zhills .... funny thing is the original recipe called for squash and I changed it to zucchini....ha!  All in the same family I guess!   

Onto next recipe......anyone have something using TOMATOES?

Pasta Pomodoro

Ingredients:

8-10 Roma tomatoes  (I have used Cherry tomatoes)
8-10 leaves fresh basil
2-3 cloves garlic
Red pepper flakes to taste (Adds flavor)  not hot if you use a few!)
2 tablespoons olive oil
salt and pepper
pound of pasta (your favorite)   (2 oz per person)
Pecorino Romano cheese

Easy Cooking Instructions:

Before you start… Put water on to boil for pasta. 
Cut tomatoes in eighths; set aside.  Slice garlic thin.  Cut basil into strips.

 

Make sure the pan is deep enough to hold all the tomatoes and the pasta that you will add later. 

 


Add olive oil, basil, and garlic to large skillet pan. 


Saute for a minute or two.  Do not let the garlic brown

Add the tomatoes. 

Cover and cook 15 minutes on med heat or until tomatoes become a sauce. 
Add salt and pepper to taste.

Cook the pasta while tomatoes are cooking. 
When pasta is ready add directly to tomato sauce in pan. 

Mix and serve.  Garnish with fresh basil and cheese. 

 

This makes a great Summer meal.  Enjoy!

Okay, bear with me, this is actually not a joke...

at the beginning of the year, my local grocery store had the Smart Ones for sale 5/$10.  I bought ten of them, because they make easy lunches. I didn't realize that one of the boxes was all potatoes.

Fast forward to last week when I made them for DH and myself as a side dish for our salmon.  The one package was just enough for the two of us, and he actually commented that he liked the potatoes! Go figure!

Elotes (Mexican Street Corn)

 
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 small clove garlic, pressed
  • 1 Tbsp. fresh lime juice
  • 1/2 tsp. chili powder
  • Kosher salt and freshly ground black pepper

  • 8 ears fresh corn, husks removed
  • 1/3 cup finely crumbled Cotija cheese
  • Chili-lime seasoning (such as Tajin and chopped fresh cilantro, for garnish

  1. Heat grill to medium. Once hot, clean and oil grill grates. Stir together mayonnaise, sour cream, garlic, lime juice, and chili powder in a bowl. Season with salt and pepper. 
  2. Grill corn, turning frequently, until lightly charred, 5 to 7 minutes. Brush with mayonnaise. mixture and sprinkle with cheese, dividing evenly. Garnish with chili-lime seasoning and cilantro.

 

Next ingredient: Something kid-friendly that I can bring to my neighborhood block party next weekend.

@house_cat   How about these?  

Banana split bites

 

Cut bananas into 2 inch pieces

Melt chocolate discs and dip each banana section into chocolate and let dry a few minutes and harden.

Dip bite in sprinkles or nuts.

Top with whipped cream and a cherry

 

A friend made these for a birthday party, the kids LOVED them.  Easy to assemble and enjoy.

Those are SO CUTE! 

I don't think I'll be making them for the block party, but I will definitely be making them in the next few weeks. My granddaughter will love them and we can assemble them together. Thank you for a really good idea!

@lynnie61 ... those Banana Split Bites are so cute...look yummy too!  @house_cat ... my first thought of something kid friendly is a big batch of cookies...for my gang...Chocolate Chip or Brownies.  But, here is a recipe that is good for all ages.  Kids are so picky, I wouldn't worry....fix what you like.  

 

PRETZEL SALAD

 

Base.....2 2/3 cups crushed pretzels

             1/2 cup melted butter

             3 tablespoons sugar

 

Mix base ingredients together and put in a 9x13" pan.  Bake at 350 for 10 minutes, then let it cool.

 

Filling ..... 1 (8 oz) container whipped cream cheese

                 1 cup sugar

                 1 (8 oz) Cool Whip

 

Whip sugar into cream cheese; then fold in Cool Whip.

Spread on the pretzel layer.  Let cool in refrigerator.

 

Top Layer .... 1 (6oz) Strawberry Jello

                      2 cups boiling water

                      2 (10 oz) packages frozen strawberries

 

Dissolve jello in boiling water.  Put frozen strawberries in jello and stir until jello thickens.  Refrigerate for 10-15 minutes and then put on top of filling.  Chill for 5 hours.

Texas Sheet Cake Cookies

 

2 large eggs, room temperature

1 box CHOCOLATE cake mix

1/3 cup canola oil

 

Frosting..... 1/2 cup butter

                   2 tablespoons baking cocoa

                   3 tablespoons milk (preferably whole)

                   2 1/2 cups confectioner's sugar

 

Preheat oven to 350.  Whisk the eggs; add cake mix and oil stirring all together well.  Drop or scoop by tablespoonful onto parchment-lined baking sheets.  Bake until edges are set, about 7-8 minutes.  Let stand on cookie sheets for 5 minutes before transferring to a cooling rack.

 

Meanwhile, for the frosting, in a saucepan, combine butter, cocoa and milk.  Cook over medium heat until butter has melted, stirring constantly.  Remove from heat and add confectioner's sugar; whisk until smooth.  Spread frosting over cookies.
