We are having some friends over tomorrow evening for a movie and pizza.  One couple is bringing salad and breadsticks from Olive Garden.  We're getting the pizzas and I thought it would be nice to have a small tray of italian cookies and cannolies.  But I'm thinking I really should have some type of appetizer.  Especially something to munch on while my husband picks up the pizza.  I don't want to cook anything, it's brutally hot here.   Store bought will be just fine.  Want to keep it simple and easy.  Any suggestions?  TIA!

@ScrapHappy Fruit platter, or cheese board or veggie platter????  Keep it simple....or eat the salads and breadsticks for an app.

How about a fruit, nut and cheese tray. Cool, simple and not too heavy. Enjoy your pizza!

This recipe, Easy Feta Dip, is good and indeed easy....and if it's not all eaten that night it comes back around the next night, too. I'm going to take the lazy route and post a link to the blog I got the recipe from. Hope that is okay here. I like the addition of balsamic vinegar that's mentioned, and I also put a small can of sliced, drained black olives on mine. Recipe says to serve it with warmed sliced baguette, but if you know FOR SURE the friends are bringing the Olive Garden breadsticks, you could use those for the bread. Also, I think I tend to use a little more olive oil then what is called for in the recipe...and even a couple drops of Tabasco.

I would order a cheese and fruit board from your local market.  I would skip the nuts, only because of allergies.  The cheese and fruit can be both an appetizer and part of dessert.  Since it is so hot, along with the cookies (I would skip cannolis), I would get a selection of frozen water ice--maybe from a Rita's if you have one near you.

The next time that I hear salt and ice together, it better be in a margarita!

I'd make some colorful fruit kabobs, along with a cheese platter.

This is a Taste of Home recipe-we have made this many times and everyone loves it.  The only  thing you have to cook is the tortellini- but I believe you could leave it off and substitute a cube of cheese.  The recipe is called Antipasto Kabobs.  You can google it at the Taste of Home website or if you can't find it, I can post it for you.   It does make a lot but you can cut the recipe in half for a smaller group and it does keep well for a few days.

I think a good quality chunky salsa (or a simple home made salsa) and tortilla chips would fit the bill.  Its refreshing, not too filling.
