I had friends in So Cal that owned an upscale Chinese restaurant years ago in Newport Beach. They made fortune cookies and almond cookies every week to use as dessert. I have not used the almond cookie recipe in years but decided to add to my cookies this Christmas. Very easy to make and it got rave reviews.
1-1/4 cup Lard
1 cup sugar
2 eggs, divided
1 t almond extract
3 cups flour
1 t baking soda
1/2 t salt
Blanched almonds
Sift flour, salt and baking soda together.
Cream lard, sugar, 1 egg, and almond extract together. Add dry ingredients and mix well.
Form into 1 inch balls and place on an ungreased cookie sheet. Make an indentation in center and place 1 almond in center of cookie. Brush with beaten egg.
Bake at 350 for approximately 20 minutes depending on your oven.

The Chinese almond cookies I've had have been hard and not very good.
