It seems like a switch was turned the past few days from summer to fall.  It is definitely meat loaf weather so I just made a trip to the store.  I make a really basic meatloaf with the ultimate goal being delicious meatloaf sandwiches. 

 

1 can (8 oz) tomato sauce, divided
2 pounds ground beef
1 large onion, chopped
1 cup fresh bread crumbs
1/3 cup A 1 sauce
2 eggs beaten
1/2 t ground black pepper

 

Heat oven to 350. 

 

Reserve half of the tomato sauce.  Mix remaining ingredients.  Press meat mixture into a 9 x 5 loaf pan.  Bake one hour draining fat off after 50 minutes and topping meat loaf with remaining tomato sauce.

 

Over the years I have changed this recipe at little.  I now use 1 pound ground beef, 1/2 pound ground pork, 1/2 pound ground veal.  Some times I throw a little ground lamb in there.  I also usually grate a large carrot and add to the meat mixture.  Can't wait for tomorrow for meat loaf sandwiches!

DiAnne, I always enjoy the recipes you post.  I had to laugh at myself about this one because when I first read the title, I thought "A one WHAT meatloaf?"  At least I did recover consciousness and sanity before I even got to the ingredients list.  Thanks for the recipe and the self-inflicted chuckle.

thank you for your recipe DiAnne and while it isn't fall here yet, still 90 and humid I did copy this and will make it once we get into fall weather, thanks again, sounds good.
