I took this salad to the family reunion recently.  The bowl was empty when I left to go home.

7-Up Cranberry Salad

2 (3oz) Raspberry Jell-o

1/2 c boiling water

1 cup 7-Up

        Dissolve Jell-o in water, then add 7-Up. Put in refrigerator to begin to thicken.

 Then add:

1 can whole berry cranberry sauce (I put the sauce in a bowl and stirred it well before adding it to the jell-o)

1 large can crushed pineapple (drain and save juice)

2 cans mandarin oranges, drained

½ cup chopped walnuts or pecans (optional)

Mix together and put in a 9x13 inch pan.  Put in the refrigerator and chill until firm.

TOPPING

8 oz. cream cheese, at room temperature

 3 T. pineapple juice

powdered sugar, as needed to make topping thick, but still spreadable

½ - ¾ c. chopped walnuts or pecans (optional)

Beat cream cheese, add pineapple juice, and beat until incorporated together.   Add powdered sugar and spread on top of salad.  Sprinkle chopped nuts over top of salad.
