I have a feeling that we should just close the Recipe Swap for the next month while we all get over having too many parties, dinners, buffets and holiday family meals!!! No one needs another cake, pie cookie or bar, that is for sure!!!. Maybe a simple soup recipe would be in order???

30 Minute Minestrone

2 medium carrots, chopped
1 cup chopped cabbage
1 celery stalk, thinly sliced
1 small onion, chopped
2 tsp. vegetable oil
3 cupswater
3 bouillon cubes
14 oz. can Italian stewed or diced tomatoes
1 cup torn fresh spinach
2/3 cup cooked elbow macaroni (or small shells)
1/4 tsp. pepper

In a 3 quart saucepan, saute carrots, cabbage, celery, onion and garlic in oil for 5 minutes.
Add water, tomatoes, and bouillon; bring to a boil.
Reduce heat.
Simmer, uncovered, for 20-25 minutes or until vegetables are tender.
Stir in spinach, macaroni, and pepper.
Heat through. Serve hot.
Note: Can add a can of cannellini beans and top with Parmesan cheese. Serve with heated Italian bread, butter and a fruit bowl.
Cook the elbow mac separately and put some in each serving bowl and pour the soup over, so it doesn't get mushy.
