Veggies................lots of color in those,  Good for you too.  You can fancy up radishes, and fill celery stalks. Red and yellow and green peppers.  Have some loaded potatoes, keep them warm, and olives, green and black.

A baked pasta dish like lasagna or baked ziti with or without meat.  Mac n cheese is good, too.

A big name person in town always has a Christmas Buffet that we attend every year.  My DH gets invited because he sometimes works with him and I get to go along.

His Buffet is always the same every year.

Spiral Cut Ham

Turkey

rolls and bread from a bakery, not a grocery store

Gourmet condiments

hummas with speciality crackers

cheese ball

meat balls

large platters of fresh veggies/ with dips

trays of fresh fruit fruit cut into serving pieces

Potato salad

pasta salad

cole slaw

mixed green salad

I can’t remember everything and don’t remember desserts, there is a lot of small foods on toothpicks that are easy to eat with your fingers or just pop into your mouth.

He puts all of the food on his large formal DR table.  The chairs to the table are scattered in other rooms.

Everyone goes around the table fills their plates,  then they go to find a seat, or stand and eat somewhere.  He usually has maybe 50-70 people.  Some just drop in for an hour or so, then leave.  Most stay for a while

Some type of potato casserole, i.e. scalloped potatoes or a twice-baked potato type casserole, fresh fruit salad or cut up fruit on a platter with a sweet dip, a pasta dish of some kind, croissants (store-bought), little meatballs or mini hotdogs/sausages in a crockpot, veggies and dip or hollowed out bread bowl with dip, deviled eggs, a nice punch in pitchers or a punch bowl would be festive!

A nice charcuterie plate, on a wooden board.

Stuffed dates with goat cheese or cream cheese, top with a pecan half (candied or just toasted)

I make these phyllo triangles stuffed with ricotta and mozzarella. They are a bit time consuming but can be made ahead and frozen, They are so good and I can never make enough. People always ask for them. They are pretty too!

Olive balls, the kind wrapped in a cheese dough then baked.

Hot baked artichoke-cheese dip with baguette slices. Delish!

Tuna poke served in crispy phyllo cups is a different but tasty addition.

A bowl of warm spiced nuts

For something sweet, a selection of petit fours and truffles, little pastries (find a good bakery and don’t fuss)

All of this is for an appetizer type buffet.
