In my bread/roll making. Ordered some dry milk powder from King Arthur and see if that really makes a difference.

@SharkE - I have a number of bread machine cookbooks and many of the recipes call for dry milk powder.  I think it adds more body to the bread, IMO.

I never can figure out if you use so much dry milk and add water to it ?

 

seems like I read somewhere on King Arthur

 

1/4 cup dry milk additive then you add water up to the 1 cup level of your measuring cup.   Hope the bag explains the calculation .

As long as you add the required amount of liquid for your recipe I think you can just add the dry milk to your dry ingredients. My hot mashed potato roll recipe calls for scalded milk in the regular ingredients so I don't think the dry milk would be necessary. I think a lot of bread recipes call for scalded milk.

I have 2 bread machine recipes from the same  manufacturer (Bella)

 

The sweet bread recipe calls for milk powder and the sandwich bread recipe calls for dry milk.

 

Are they the same?
