Went to Peoria some years ago and had chicken baked in milk Lost the recipe Anyone out there have one? Made a delicious sauce

Ingredients
1 (3 pound/ 1.5 kilogram) organic chicken
Salt and freshly ground black pepper
4 ounces (115 grams) or 1 stick butter
1/2 cinnamon stick
1 good handful fresh sage, leaves picked
2 lemons, zested
6 garlic cloves, skin left on
1 pint (565 milliliters) milk
Directions
Preheat the oven to 375 degrees F (190 degrees C/gas 5), and find a snug-fitting pot for the chicken.
Season it generously all over with salt and pepper, and fry it in the butter, turning the chicken to get an even color all over, until golden.
Remove from the heat, put the chicken on a plate, and throw away the butter left in the pot.
This will leave you with tasty sticky goodness at the bottom of the pan, which will give you a lovely caramel flavor later on.
Put your chicken back in the pot with the rest of the ingredients, and cook in the preheated oven for 1 1/2 hours. Baste with the cooking juice when you remember.
The lemon zest will sort of split the milk, making a sauce, which is absolutely fantastic.
To serve, pull the meat off the bones and divide it on to your plates.
Spoon over plenty of juice and the little curds.
Serve with wilted spinach or greens and some mashed potato.

I live near Peoria and except for Jamie Oliver's recipe have never heard of Chicken in milk. I am intrigued, however, so if you find the recipe or replicate it please post!

The Green Rice recipe posted in the recipe exchange game reminded me of the chicken I fixed with this rice, as was served at Stephenson's Apple Farm Restaurant. It's definitely a special occasion old-fashioned absolutely delicious dish. I think Stephenson's served it with the green rice, apple fritters and maybe even corn - high fat, carb and calorie meal.
Stephenson’s Apple Farm Baked Chicken 'n Butter 'n Cream
1/2 c flour
1 1/2 t salt
1/2 t paprika
1/4 t pepper
1 cut-up frying chicken
1/4 c butter
1 1/2 c hot water
1/2 c non-fat dry milk powder
Dip chicken into water. Coat with mixture of flour and seasonings. Put skin side down into 13x9x2-inch baking pan. Dot with butter. Bake at 350 deg F for 30 minutes. Mix water and milk powder. Pour it around the chicken. Bake 1 1/4 hours more, or until chicken is tender.
Stephenson’s Apple Farm Green Rice
3 c cooked rice
1 c chopped parsley
1/2 c grated cheddar cheese
1/2 c chopped onion
1/4 c chopped green pepper
1 clove garlic, minced
14-1/2-oz can evaporated milk
2 eggs, beaten
1/2 c vegetable oil
1 T salt
1/2 t each seasoned salt, pepper
1/4 t Ac’cent, monosodium glutamate
Juice and grated rind of one lemon
Mix rice, parsley, cheese, onion, green pepper, garlic in greased 2-qt casserole. Blend rest of ingredients. Mix into rice. Sprinkle with paprika. Bake at 350 deg F about 45 minutes, or until it’s like a soft custard.
