Was watching one of the cooking shows that was about sous vide cooking--very interesting--and saw that Instant Pot has one---will it work on any Instant Pot? am very curious about this method.

My understanding is that only certain models have the sous vide function.

ONLY the models that have sous vide:
new 2019 refreshed Duo Plus including the bundled one QVC sells
new 2019 refreshed Viva
new 2019 Duo Evo Plus
the Max
Ultra, which has been around since 2017
Smart Bluetooth and I'm presuming the newer Smart WiFi
Hmoe Depot had a new all-black Magic Chef that has sous vide. It's predecessor was made by Midea and can use IP parts, since Medea also makes the IP. The new black one should be pretty good, and was on sale for $60 last time I checked. It comes bundled like the QVC Duo Plus, too.

I did find a certain sous vide by Instant Pot that will work with my 6-in-1--was $63 on AMz so will put that on my Xmas list--you don't have to have an IP that has a specific sous vide function---good to know.

My understanding of the Instant Pot (label) Sous Vide device is that it's designed to clamp onto Instant Pot inner pots... or other stainless steel pots. And it might also circulate the water though I'm not sure.
whereas....
Instant Pots that include a Sous Vide button or function are supposed to be able to be temperature-set for the Sous Vide cooking method but do not circulate the water.

@Thats Me--thats what I read too----in the Americans Test Kitchen episode I watched last Saturday, thy had one attached to a plastic tub and then they put plastic wrap around it to hold in the heat. I will not buy a new IP just for that feature tho--but may give this a try--am very intrigued

Hi Wagirl! I bought the recent TSV IP Duo Plus because of the price (which was terrific) and the Sous Vide button. I love this machine but can't believe I still haven't used that Sous Vide! So to be honest, I love it at this point for the improved lid with the auto locking and the safer manual steam release option but otherwise it's the same as the years-old IP Duo I've had. Guess I no sooner got this for the Sous Vide than I made a decision to cut back on meat. So, there you go! But I'm still VERY happy with this newer upgrade.

Models with Sous Vide
Max
Duo Evo Plus
Duo Crisp + Air Fryer
Duo SV
Duo Plus
Viva
I don't think the Ultra has Sous Vide nor does the Smart Wifi - at least in looking at these models on Amazon do not show a Sous Vide button.
To be sure any model you're interested in has Sous Vide, look at the specific one you're considering. You can't count on every version of a certain model having a Sous Vide function. For example, there are Duo Plus Instant Pots that have a Sous Vide button and some that do not.

@Razzy 7---good to know--mine IP is not on your list but still can use a sous vide with it according to the IP info.
