Why no sink?

It is just a ? I have when watching the kitchen shows . I have heard the host/hostess say when they are demonstrating how 'easy to clean ' the items are and wiping out with paper towel or dish cloth that they can not have running water/sink on the sets. WHY NOT? It seems plumbing in a sink or two on a huge kitchen set wouldn't be so difficult.
