a hearty soup....just made this in the Instant Pot....so good on a chilly day!

3 peeled and cubed gold potatoes

1 cup rinsed yellow split peas

1 chopped onion

2 stalks chopped celery

1 cubed carrot

1 tbsp. Red Curry Thai paste

2 cloves garlic

1 tbsp sage

1 tbsp veggie Better than Bullion

I made this in the small IP and add enough water so it was about an inch from the top of the pot

Used the Soup button on the IP

Blend briefly...a creamy hearty split pea soup better than than the restaurant Anderson's Split Pea

I don't really cook regarding the weather. We bbq all year round. The only thing is in summer I don't want anything that heats up the kitchen.

Anything in the crock pot!    It just smells so good and makes the house feel more cozy and warm.    Our outdoor grilling season is limited in the northeast, while we really enjoy it there is no way I'm shoveling the deck to get to the grill when I can set  and forget the crockpot and not even take off my slippers!  LOL

We have been experiencing cold and yucky weather and it jump started me back to cooking mode.  It has been meatloaf, pasta, corned beef and cabbage, chili.  Expecting more weather in the next few days and I have a new soup recipe to try and heaven knows what else I will be cooking.  Honestly, I need to get rid of some of the leftovers.

I haven't had meatloaf in a long time.  I think it's time to make it again.

Soups are satisfying to me in cold weather.  I would make stew but I never get it the way my mother made it.

Some of our cold weather dinner favorites are beef barley vegetable soup, chicken vegetable soup, tortellini vegetable soup, beef stew, shrimp gumbo, chili, spaghetti & meatballs. We also like crockpot steel-cut oatmeal with chopped apples & dried cherries for breakfast on a cold morning. Just set it up before going to bed and you've got a delicious, hot breakfast when you wake up.
