@Pooky1, Wishing Ria a good recovery soon. With her busy work schedule and the holidays hopefully some good rest & meds will help.

Today I'm making a big pot of vegetable beef soup.  Some for now, and a quart or more for the freezer.  Had leftover prime rib in the freezer.  The soup will be great!

Getting together with friends for appetizers later this afternoon & we'll have a pizza at home later.  For dessert, my absolute favorite ... cherry cheesecake!

Today was another day in Epcot.  For lunch we had BBQ in the America pavilion.  Both DH and I had North Carolina Pulled Pork.  It came with cornbread and I had a side of cole slaw.  DH had a side of onion rings.  I was able to mobile order from my phone so we did not have to wait in line. DD had Chinese food from Sunshine Seasons in the Land pavilion

 

For dinner we had food from a quick service patisserie in the France pavilion.  I had ham, cheese and bechmel on a croissant.  DH and DD had croque monsieurs. 

 

It started to get really crowded in Epcot after dinner so we headed back to the hotel.  We are staying near Epcot so we should be able to see the fireworks from our room at midnight.

@ninjawife, Fun trip and great food choices. Enjoy yourselves! We haven't been to Disney in many years. Epcot was a top choice for us.

Yesterday, New Year's Day, I had a potroast in the oven for 6 hours... it drove the dog crazy! I made sure she had a nice treat when it was cleanup time last night. 

 

I have to say it was one of the best pot roasts I've ever had and the family agreed. We enjoyed it with mashed potatoes and green beans.  I managed to save enough to make sandwiches for another night. My kids filled up containers for today's lunches.  

 

I usually use a top or bottom round roast, but this time I bought a chuck roast from Aldi and it was so much better.  I know that chuck is recommended, but this is the first time I used it and there's no going back.

 

Tonight we're having chicken tikka masala with rice and peas. The sauce is from a jar... not DH's favorite, but it is mine and once in a while I put myself first, lol.

My DIL brought us the biggest box of Russel Stover chocolates I've ever seen, must be at least two feet long.  It's torturing me because I've been trying to stay away from sugar.  DH ate all the ones he likes, so now the only ones left are my favorites.  I'm thinking I probably should throw them away, but that hurts.

I've been away from the boards for a while and didn't know Ria was unwell. I'm sorry to hear that, but it's clear that she's in good hands.

I bought a package of two flatbreads at Aldi this week. Tonight I'm making personal pizzas with them.  DH will have pepperoni and mine will be spinach and mushroom.

It's not even 9 am here and I'm already looking forward to dinner!
