As expected, my sons swooped in and took the leftover chicken enchiladas for their lunches. 😆 I actually planned for that and had it all packed up for them this morning.

 

Partially sunny today. Yay! We are having grilled pork chops, twice baked potatoes and roasted brussel sprouts for dinner.

@kate2357 I love that your boys feel comfortable to help themselves.  Whenever our kids come over, I'm always trying to give them food to take home, not only leftovers from the meal but also if they need anything from my overflow closet or garage fridge..  On Easter, everyone was here and they all left with enough food for meals at home. At some point, one of them asked, "Mom, do you have any extra coffee?".  Then another asked, "Mom, do you have any extra coffee filters?".  Of course, I was happy to oblige.

When my sons asked to come over and use their dad's exercise equipment 5-6 days a week, I really never thought it would last this long nor did I think I would be feeding them. They are like their momma....frugal. They tell me I saved them 10 bucks by not having to buy their lunch. I ask where can you buy lunch for only $10?

 

I've now decided to just embrace not having leftovers OR I will put on a DO NOT touch note if I do plan on a leftover meal.

 

It's nice I get to see them so often. Very happy they live close by and we seem to have escaped in-law drama too. They married fabulous women.

I had my only crown fall out when I was on vacation.  I having it put back by my dentist today.  So tonight's dinner will be lobster bisque from Wegmans.

Was the spam also covered in syrup? One of my Alaskan friends made waffles and fried spam and we covered it with Mrs Butterworth. Not sure if I was just overly hungry, but it was delicious.

I've never made Chicken Paprikash, so I had to go look up a recipe. It looks like a nice dish to have on a chilly day.

 

It's the oddest thing ... I've not been able to buy my normal Sweet Hungarian Paprika in any of the local stores. It's a brand that's been around for a long, long time. Not sure it's even actual Hungarian paprika. I ended up having to order a different brand from Amazon. Sigh, so I know I spent too much on it, but I use paprika a lot.

 

Anyway ... I want to try one of the recipes that serves the chicken w/ noodles. It looks like something my dh would try ... at least once. Smiley Happy

I admit there may have been extra syrup involved.  My husband likes a really good sear/crust on the fried spam, so that syrup supplies the right amount of moisture you know.  That's my story and I'm sticking to it!

Today's lunch was a little different than usual, but we enjoyed it. 

We had:

"Subs" on a low carb tortilla 

Pork Rinds w/Guacamole 

Hard Boiled Egg

Chia Pudding w/Mixed Fresh Berries
