DH is just getting over Covid and I have not been feeling well all weekend (I don't have Covid though) so DH has been getting ready to cook meals from Wegman's which is about a mile from our home when Joe isn't home which he is not this weekend.  Last night we had salmon with capers and tomatoes  with a side of green beans and tonight we are having steak pinwheels with scalloped potatoes and broccoli.  Tomorrow will be stuffed pork chops.

@ninjawife

Hope you and your spouse are both feeling better soon.

Steak pinwheels ... it's been so long since I've had those or made them. When I was traveling for work, there was a fresh market in one of the towns I stayed that had steak pinwheels w/ gorgonzola. Boy howdy those were good. I don't see steak pinwheels here in Seattle where I shop. When I made them myself, my spouse put them on the "we never need to have those again" list. Sigh.

Re: Whats cooking this april?

It's trying hard to be spring here today. A bit chilly, but the sun is making an appearance. Kind of nice to see a bit of light at 5:30 in the morning.

Chicken enchiladas, black beans and rice for dinner tonight.

@RedTop, Me too! Mom used to call these kind of meals "Something Out of Nothing.". So I take a little of this & that.

Tonite's dinner is stir fry chicken with some carrots, broccoli, green beans & sliced almonds. I always have rice in supply so that will be on the table.

@LunaCooks

I've never made Chicken Paprikash, so I had to go look up a recipe. It looks like a nice dish to have on a chilly day.

It's the oddest thing ... I've not been able to buy my normal Sweet Hungarian Paprika in any of the local stores. It's a brand that's been around for a long, long time. Not sure it's even actual Hungarian paprika. I ended up having to order a different brand from Amazon. Sigh, so I know I spent too much on it, but I use paprika a lot.

Anyway ... I want to try one of the recipes that serves the chicken w/ noodles. It looks like something my dh would try ... at least once. Smiley Happy

More overnight guests arriving tomorrow - hopefully for only one night.  I'm making a big pot of corn chowder and salad with all kinds of add-ins, sliced steak, shrimp and chicken and lots and lots of other stuff. I spent the day  cleaning, shopping and prepping, so we had tuna sandwiches tonight because that's all the energy I could muster.

Welcome to the boards!

I've made chicken paprikash with a recipe someone posted here. I actually ordered Hungarian paprika from Amazon so the dish would be extra special.  I thought it was excellent but DH didn't care for it so I never made it again.
