Good evening everyone. Its been hot in the 80s last couple of days but its cooling off now. We ordered Chinese food Wednesday and had a bunch of leftovers from it so we had it last night and there's still more. Ria took.today off from work as a paid day off and she took all the Easter stuff down and we went to chili's restaurant for dinner. It was really good. Hope everyone has a great weekend.

We are having smoked brisket...can already smell it and it's making me hungry. Had a bunch of eggs to use up, so I made deviled egg potato salad. Also making sweet cornbread muffins.

 

The boys have already made requests for any leftover potato salad. They are welcome to it as I would eat too much if it was just sitting there in my fridge.

Ordering in from the local Country Cafe.  Fried breaded pork chops, yellow rice, black beans and a seafood platter!  No cooking tonight!

My husband wants fish sticks, mac and cheese, and slaw for supper.  My girls want chicken nuggets and fries........  I'm fixing it all because it's going to take 3 bags out of the fridge freezer and make more room!

I have some chicken cutlets to use so I will coat with Panko and pan fry them also roasting baby potatoes tossed in oil, parmesan, minced garlic and Italian seasoning. Doing roasted broccoli for the veg.

 

I forgot, after the potatoes roast cut side down you put them in a bowl and drizzle with melted butter.

Ladies, there are going to be some fabulous dinners tonight!

Weather here has turned cooler & rainy. We will have meat sauce, rotini & garlic bread. Tossed green salad. Pudding and banana bread later when DS stops by after work.

Again, I appreciate reading about your menus!

@kate2357   Thanks. I have to say those potatoes were great.

 

 

I've roasted potatoes a few ways before but these were the best. The parmesan, garlic, Italian seasoning was good but adding the melted buter after they were roasted put them over the top.

 

DD laughs at me watching You Tube for recipes. Ha, seems Mom had the last laugh tonight.........she loves the spuds.

I love recipe sites that have videos of the preparation. I find it so much easier to follow than just the written words.
