Re: Whats cooking in this month of february?

Good morning, everyone!

So sorry for all of you who are under the weather.

We didn't have my granddaughter for the weekend, first time in about two years, because she's sick with some kind of cold and cough.

I'll be working a lot in the next two weeks and hoping I don't catch some kind of cooties from the kids at school, because I'll be going to Durham to care for DH's aunt at the end of the month.  It would be terrible if I'm sick and can't go, and maybe even worse if I'm sick and I do go.

Tonight I am making chicken quesadillas using canned chicken. I've never used canned chicken, ever, and I'm a little worried about it.  It's Swanson brand. I hope the quality is good.

Ugly, dreary, drizzly weather here, the kind of weather that makes it hard to stay motivated about anything.. or maybe that's just me.

Re: Whats cooking in this month of february?

I just pulled a batch of bacon out of the oven.  Nothing much else happening here today except me doing laundry and keeping an eye on the weather forecast.  Today it’s cold and cloudy.  Originally we were supposed to get 6-8” of snow tomorrow but this morning that’s adjusted downward to 4-5”.  We’re expecting a mix of snow, sleet, and freezing rain over several hours (10:30AM-9:30PM). DH and I are not going anywhere until Friday so the roads should be salted by then.

Lunch today -

Bacon Cheeseburgers w/Fried Egg and toppings on a lettuce wrap

Roasted Brussels Sprouts

Claussen Kosher Dill Spear on the side

Maybe a couple of Mini Peppers on the side

Hamburger and chips for us tonight.

@RedTop We had burgers the night before you did!  Husband made burger buns with a brioche recipe made with part whole wheat in the bread machine.  They were so good.

Sometimes he seems unable to get enough calories in his body. . . so bread like this helps!  Woman Embarassed  But I confess they were so good.

Re: Whats cooking in this month of february?

I hope we see an end soon to this sickness spreading around now. The weather has been keeping us in, very windy & temps in the teens. Plus the snow coming tomorrow. We are along the lake & expecting 4 to 6 inches plus more due to lake effect here in SE WI.

We are having tossed salad, sloppy joes and sweet potato oven fries. Planning on a pot roast for tomorrow.

Stay safe and healthy as you can. Spring 🌻🌳🌼 please hurry!

[ Edited ]

We had angel hair with meat sauce and mixed green salads.  I never made the chili on Sunday.

We have managed to stay healthy, but lots of people sick around here.  The one hospital system here has gone back to masks required with so much Flu, covid and RSV currently going around.

@Shihtzursqmom   hope you and everyone here gets feeling better.

Re: Whats cooking in this month of february?

Oh boy, did our weather forecast ever change!  We’re getting  2-4” of snow between 9AM and 3PM today, then it turns to freezing drizzle.  No snow is expected tomorrow or Friday, but it will get very cold.  Then a little warm up and 5-7” more between Saturday and early Sunday morning before it turns into single digits again.  We have plans to attend an event Saturday evening.  I hope they don’t cancel it.

On today’s menu ~

Leftover Chicken Florentine

Roasted Asparagus

Small Caesar Side Salad

Re: Whats cooking in this month of february?

Watching the snowfall here. Going all day & overnight. Lake effect snow here could push us over 6". Another blast coming this weekend & then bitter cold. Ugh!!

I have a roast with onions, potatoes & carrots going in the crockpot. Later on an apple crisp for dessert with hot cocoa.

Everyone stay warm & keep on sharing your great meals!

Re: Whats cooking in this month of february?

Good morning everyone.  Dreary looking day today started with light snow and freezing rain then just rain. I have a MS doctors appointment at 420 today . Yestauday I decided to make homemade gnocchi from a recipe from Americas test kitchen cooking show. They said this recipe comes out perfect every time because instead of cooking potatoes your using mashed potato flakes so dough always comes out the same .so I have been dying to try it. And it was easy to do and they came out delicious. Recipe is 2 cups of potato flakes, a cup of flour, teaspoon of salt, 1.5 cups of water, 2 eggs. That's all. So Anna and I had them for lunch and disband I had them for dinner. And we had clean times with dinner and I made corn bread in the bread maker. It was just ok. I had leftover French toast for breakfast. Have a great day everyone.

Re: Whats cooking in this month of february?

Today is our temporary reprieve from the snow.  DS and the kids will be here this afternoon.  Our DGD and I will work on making valentines for her to give her family.  One of the kids split a seam on a stuffed animal so Nana has to do a little sewing.

Lunch will be:

Salmon w/Lemon Dill Cream Sauce for the adults

Bacon Wrapped Grassfed Hotdogs for the kids

Steamed Broccoli
