Whats cooking in in this january?

were already into the new year. Good evening and happy new year's Eve everyone. Cold today and a couple inches of snow tonight. I had last little bit on cheesecake. Leftover Chinese food for lunch and for dinner I made a mushroom pizza with mozzarella, mushrooms, mozzarella, grated parmesan cheese and olive oil instead of sauce. I made ricotta cookies yesterday and we had a few of them and grapes..Have a great new years Eve and a wonderful new year everyone.

Pizza is on the menu here as well, along with a big garden salad and some nice chilled Martinelli's. It's our annual tradition!  Smiley Happy

New Year's Eve here was very snowy, bitter cold and full of squalls!  We had peel and eat shrimp last night - our ritual!  Today I am planning pork chops and sauerkraut.  We are not fans of sauerkraut but it was always a tradition of my Mom's for good luck.  I can't duplicate her sauerkraut -- it was wonderful and the only way I really liked it.  However, we will follow tradition.  We also will have some of the New Year's pretzel that you buy at the store for dessert.

My day is cut out for me.  I have to get laundry done and I have gifts to wrap for this weekend. My sister needs to get to an appointment tomorrow which no one can take her to so DH and I are driving up and  taking her - driving 2 hrs. each way for a 10 minute appointment.  I know 🤦‍♀️.  I'm grateful that my husband is a kind man.  He's supposed to return to work tomorrow (has been using up his remaining vacation) but he talked with his boss and has someone to cover for him. I told him I'd go alone but he doesn't want me doing that, just in case the weather turns nasty up there, plus he doesn't want me lifting my sister's walker in and out of the car.  Personally I think I'd be fine but I appreciate him. 

 

I just finished enjoying a few scrambled eggs with salt and Tapatio hot sauce along with a mug of coffee with a teaspoon of cinnamon added to it.  

 

DH and I have been using Dohjoy bread off and on.  It's low carb and claims say it doesn't spike insulin.  I'm sure strict keto wouldn't approve but it's our occasional exception.  He still likes an almond butter & jelly sandwich sometimes.  We get the Good Good SF jelly. Today I'm trying a simple low carb recipe for creamy tomato soup that uses jarred RAO's marinara sauce and a few other simple ingredients, and is ready in a few minutes.  the recipe make four 1 cup servings. We're also having a low carb grilled cheese sandwich with our soup. We'll have lunch after we walk so the hot soup will hit the spot.  I'll have a container of Chobani zero sugar yogurt too.

I made sweet potato pancakes for breakfast. I am going to make a pizza at some point and use up my provolone and mozzarella. 

 

Working from home today so not competely free, but it's nice to work in pajamas for a change.

@JeanLouiseFinch :  Your DH sounds like mine...I have always said that he is kindest person that I know.  We just celebrated 50 years and I am blessed beyond measure.

What is it about Bread, Milk and Snow?

 

tonite it was leftover chili I made Tuesday. we were out of everything so went food shopiing yesterday. New Years Eve. The stores were just mobbed and even Aldi was practically cleaned out.  I think it was because snow was predicted and sure enough, woke up to a white New Years Day!

 

I picked up a big Salmon filet at ALDIs and was going to make a recipe from the Test Kitchen using Asian style  ingredients. but I had phone calls all day and just didnt feel like doing a project for dinner.  So tomorrow it will be fish.

@foxywoods  I'm in NE PA, it snows every year.  Even if they are calling for 2 or 3 inches people flock to the store in droves.  You would think they are going to trapped until spring.  For 2 inches of plain snow, no ice, keep an extra loaf of bread in the freezer,  a couple cans of soup, a box of pasta and jarred sauce on hand.  You won't starve.  Roads will be cleared by the next day.

 

A call for a lot of snow or blizzard conditions, yes, get to the store and make sure you have everything you need.
