Visiting my sister today and she made a pot roast with celery, carrots, and onion in the Instant Pot and a delicious gravy too.  Mashed potatoes and green beans on the side.

Our heat wave is breaking so I might actually feel like making meals this week. The next few days we'll be eating:

Salmon and sweet potato fries

Italian stuffed chicken (not sure about a side dish)

Meatloaf and mashed potatoes

Meatloaf sandwiches and baked beans

Chicken fajitas

Tuna salad (will add celery, fresh peas and cubed cheese)

We made mango salsa and grilled shrimp so Jack could have seafood Tacos and coleslaw. Also made a strawberry shortcake w angel food cake. Had to make enough for Jack and his 3 brothers who are staying w/Jack until he transfers to new rehab place. They kicked me out and I went and spent time with the grandbabies. It was a good day.

Good morning everyone and happy belated birthday Jeanlouisefinch. I finished planting the garden friday. Next Is putting up the new pool. We had lunch 

with my mil satauday and Sunday . satauday she made broccoli rob with pasta French fries and battered fried chicken and salad and at night we ordered food a couple nights and Sunday she made pasta and meatballs, chicken, cauliflower baked with bread crumbs,mashed potatoes, fried artichokes, chicken tenders marinated in seasar dressing and more that I don't remember. Today I'm making a meat and ravioli dish. Everyone have a great week.

I understand completely.  I try my best to save on groceries these days, so throwing away food is extra painful.  However, I have learned to get over the guilt of it. Yesterday I cut up a whole seedless watermelon and threw it all in the trash. It was a very weird texture, spongy and fibrous, not at all appetizing. I couldn't see the point of putting it into my fridge only to pull it out and throw it away days from now.  I wish I'd saved the receipt, because melons are a pet peeve of mine these days. They're so expensive and often inedible.

I am on my own for dinner tonight.  I have a hair appointment after work so DH and DD are getting take out from a place they like but I don't.  I will probably stop by the grocery store and pick up a frozen dinner.

Yesterday we splurged and ate at one of my husbands favorite seafood restaurants because
Later this week we are starting a diet I’ve never had a weight issue but unfortunately the past few years the pounds have crept up and up
I’m allergic to seafood so I had prime rib , baked potatoes , slaw my husband had fried shrimp and oysters, baked potatoes, he doesn’t like mayonnaise so he substituted extra hush puppies
Tonight we were supposed to start the diet but we had leftover spaghetti sauce from Saturdays spaghetti so I decided we’d have the spaghetti and garlic bread tonight
I hate to throw out food also

Today I had to wait for several return calls so decided to clear out my pantry since spouse was sleeping most of the day:

 

  • Made small trays of lasagna (gave to friends & froze some)
  • Chocolate chip cookies as a treat for spouse
  • A pot of chicken pastina soup
  • and dinner for me🙂

I wish someone would do that while I was sleeping!  And pastina soup!  That's a blast from my past! I was raised on it, but I haven't found pastina in any of the grocery stores since I left NY in 2001.

A quiet house again, finally! Company gone so it's into the laundry room I go. DH to man the vacuum cleaner & mop the floors. We had a great visit with our DD & nephews & niece! 

 

Enjoyed lots of great food so now into the fridge next to see what's what. Dinner menu follows! Have a nice day!
