Firecracker shrimp, jasmine rice and asparagus for dinner. Ranier cherries for dessert.

I said there would be no cooking while DH is away, but I can't resist my favorite pasta dish which means pasta with garlic and oil.  DH doesn't like it, so I haven't had it since lockdown when he was in NC and I was still in CA.  It's so easy to make.  When we were kids my brother and I dubbed it "ollie oilies" and my kids know it by that time to this day.

So hot & humid here. Plus the haze & smell here are just awful. I've been in mostly to avoid it.

Decided on chef salad and rolls for dinner. Watermelon for dessert.

Tonight we had salads and baked potatoes

MOMMAVik I haven’t saw any news but hopefully the smoke will clear soon I know that has to be awful for everyone affected

Today is part 2 of granddaughter's birthday... a party at the farm with all her friends.  I would've been fine leaving it to the younger generation and sitting this one out, but they expect that I'll be there, with a big tray of baked beans.  I found a recipe last year and judging by how many times I've been asked to make it since then, I'm assuming it's a good one.

 

In case anyone is in need of a new recipe:

 

Baked Beans that Bite Back

 

2 slices bacon, diced

1 onion, diced

1 bell pepper, diced

2 garlic cloves,  minced

 

1 T dijon mustard

2 T ketchup

2 T barbeque sauce

2 T apple cider vinegar

1 T brown sugar

1 T smoked paprika

1/2 t chili powder

1/4 t salt

1/4 t fresh ground black pepper

 

1 (55 oz) can Bush's original recipe baked beans

 

1) Saute the bacon, onion, bell pepper and garlic, until bacon is crisped and veggies are softened.

2) Mix all the seasonings and condiments.

3) Add the seasoning mixture to all the other ingredients, being mindful not to smash the beans.

4) Bake covered at 400° for about 30 minutes.

    Remove cover and bake an additional 30 minutes.

*I've also made these successfully in the slow cooker.
