What's Cooking this September 2020?

I could not find the September thread so started this one. If I messed up do not hesitate to recopy and put it where it belongs. LOL.

 

No big plans for cooking -  seems to be my thread these days. I do regret it but cannot do a whole lot about it.

 

Did fix some of my veggies last night with the orange chicken. An excellent combo of healthy food and so easy to fix. Just pull out the WOK pan and get started. Very easy to do without a lot of standing over the stove.

 

Speaking of standing over the stove the horrible heat will be back for the weekend - am NOT looking forward to that at all, All three digit days and that means nothing much gets done. Of course with me nothing much gets done anyway.

I didn't see one either so thank you for starting this one.  

 

I made some soup with black beans, sweet potato hash, and broccoli slaw that  I am working on this week.  

 

Just reminded myself I have some mushrooms that I need to sautee in avocado oil and get busy with before I lose them.  Dinner!

Leftovers from Chinese take out.   Reheated in my carbon steel wok.   Kung Pao shrimp and chicken.   Bbq pork fried rice.  👍

Making a meatless lasagna for one.  Found that the no boil flat lasagna noodles fit perfectly in a loaf pan.  So using just 3-4 noodles (depending on how many layers you want), you can make a small lasagna for 2-3 servings depending on your appetite.  The leftovers are always appreciated.....no need to cook again another night!  Perfect size for one or two people.

KFC tonight, as my fridge has no leftovers, and I'm not cooking again until trucker daughter gets home!

Salad (lettuce, cukes, garden-fresh tomatoes, radishes, shredded carrots). Pick your toppings (cheese, bacon, ham, boiled eggs) and croutons with Catalina dressing. I chose all toppings and added Caesar croutons. DH hates croutons!!??

Did not feel like cooking tonight so hubby is getting Chinese for him and KFC for me.Of course we'll have leftovers.Happy eating all and enjoy the week-end.

having a bbq for hubbys birthday....bbq steak and chicken homemade pork and beans homemade tuna mac salad and homemade potatoe salad..yum and cannoli birthday cake...

I made baked ziti in my Ninja Multi cooker. It's fast, less steps to take, pretty much throw everything you want in the pot. Within the last few minutes, add the ricotta cheese throughout the pot and cover with the mozzarella. Plenty of servings and left overs for a couple of days. Doesn't heat up the kitchen and easy clean up. I've been using several of my countertop appliances for cooking and I'm loving it!

Threw together sweet potato hash, egg whites and broccoli slaw for a breakfast bowl this morning.
