Good morning one and all - thanks Preds, your greetings sure help getting the eyeball in focus and brain started for the day.

 

Fixed no formal dinner last night - had a few frozen dinners so they got what they wanted - or at least picked out something available. LOL. Davey's Dad and little sister are staying the weekend to visit Davey. I do not mind but must admit three weekends in a row are a bit much for this old lady but it is also important Davey have some support from his Dad. Sad thing is his Dad has messed up his life so much he has no place to take Davey to visit with him - and now his car is gone - blown engine. Do not know what to say about people who have the world on a string and then mess up. Only thing available is to say prayers for them.

 

Dinner tonight? Will probably toss some chicken breasts in the slow cooker with something. Always easy to fix and healthy - do not have a clue as of yet as to what to have as go withs.

 

Mousiegirl, I use to fix the sliced yams with brown sugar and gobs of butter a lot - LOVE sweet potatoes. Hmn, I need to think about doing that again but not sure anyone around here these days will touch a sweet potato or Yam.

@Winifred  Are you getting rain?  It has been a steady dowpour since late yesterday, yipeeee!  I hope you get some soon if you are not already. Smiley Happy

 

I am the only one who loves yams/sweet potatoes, but I insist the others eat them once in a whiel as they are a power food, and of course I always fix them at Thanksgiving with toasted marshmallows on top, Smiley Happy and when I serve ham, I serve yam. Smiley Happy

I cooked some chicken in my pressure cooker for chicken salad and chicken and dumplings.  I made the salad but put the extra in a foodsaver bag in the freezer so I can make the chicken and dumplings later in the week.  

 

I made a huge container of fruit salad, roasted some almonds for snacking, made a delicious pumpkin spice pound cake, and made up some salisbury steaks that I will fry up for supper tonight along with some gravy, mashed potatoes, and green peas.  

 

I love to cook and prep on the weekends for meals throughout the week.  Yesterday I made 24 servings of oatmeal (I mix steel cut and old-fashioned), added some chia seeds, walnuts, and unsweetened coconut.  I froze the servings in muffin tins and then transferred to a freezer bag to save room in the freezer.  Just get one out, add a little water or milk in a bowl and heat in the microwave.  So easy to take with me and eat after I get to work.  I cooked mine on the stovetop but I am going to try cooking the oatmeal in the crockpot next time.

Last night I DID put boneless chicken breasts in the slow cooker with a lot of bell peppers, ginger sprinkled about,  garlic salt and some dry ranch dressing. Very very good - had fresh green beans as a go with. WAS planning some mashed potatoes however everyone was going in different directions with NO ADVANCE notice to me so refused to do the potatoes. Actually the chicken mixture and green beans was quite enough - did not need the potatoes. So have some left over.

 

Spent a very busy day going from here to there and I am ready for bed but cannot do it quite yet. In about an hour must fix dinner for the little girl - Ricky is still with Sherry but I have to get her tomorrow. Do HOPE and pray their grandmother will get here to watch the little one as I also have a MD appointment. We shall see.

 

Wore my NEW LA RAMS vest today to church and elsewhere - drew a lot of pats on the shoulders and comments ALL POSITIVE OF COURSE. We are soooooooooooooo glad they have come back to California - should never have left in the first place.

@flbettyboop  I'm sorry!  I usually go tech free on the weekends so I didn't see this until this morning.  I normally buy whatever's on sale which is usually Betty Crocker.  My peeps like her triple chocolate fudge the most.

I had to make a quick trip right before dark so did that, and on the way home stopped at McDonald's. Cannot stand that place but Ricky and Davey were in seventh heaven. The little girl and I gagged. she had carrots and I had a bagel What can I say?

 

Ate well Saturday and on Sunday the rest had frozen dinners. This group loves that stuff. Again, not me.

 

I am really sleepy - hope one and all had a great day - not many stopping by today - hurry on back people!!
