Thanks @Pooky1 and Maria.....those Tacos are going on my to-make list.
Yay on the pool installation.......many hours of cooling off ahead !
Last night was one of those "don't feel like cooking, don't feel like going out, don't feel like take-out, don't feel like fast food nights." BUT--- I was hungry ! Soooo, I went digging in the freezer and found SCHWAN'S CHICKEN LO MEIN SKILLET MEAL. Awhile back I placed an order based on things I had read on these forums.( I was going through my "I am never cooking again" stage. ) When the order arrived ,I dumped it in the freezer and completely forgot about it. Well, threw the lo MEIN frozen into a skillet and 12 minutes later it was done....It was absolutely delicious and I still have 1/2 remaining.
Now I wonder what other Schwan's goodies might be lurking in the recesses of the freezer.

@sissel I enjoy those ham steaks too. I fry them just enough to warm and brown them. I like to make a fried ham sandwich on a roll or on toast. Sure makes a fast meal.

I just made the strawberry cake but with fresh blueberries, would have used frozen if I had had them, and this is wonderful! Of course, I love blueberries, they are tart which offsets the sugar. I put extra sugar on top before baking, more than the recipe called for due to the tartness. I will be hiding this cake from DH, as he finished the other, with whipped cream, and he isn't supposed to eat sugar, so he has had enough for a few weeks, I will eat mine with tea in the mornings. This is the easiest cake ever, from start to finish one hour, bakes for around forty-five minutes.
Tonight will be stir fry with snap peas and leftover grilled chicken over rice. I am thinking about making a sausage, asparagus, and zucchini pasta tomorrow for DH.
Every day is a bit warmer, so dreading the coming heat, but have all plants soaked. They dry out so fast in the heat in the clay soil even with amendments, that I will be watering most mornings just to keep everything alive.
I ordered Gurney's fat, juicy strawberries, how they are described, from zulily. I was sent daylilies instead, so got a refund. Finally, the strawberries popped up again, bought them, and just ate the first one the other day, very juicy and fat, lol. I have three other varieties, lots of berries but havn't turned yet.
Lots of cherry tomatoes and some peppers, but due to the weird weather earlier, it will be a while before I get any large tomatoes, squash, cucumbers, beans, peppers, and eggplant. The beans are climbing and have red flowers, and the cucumber plants are growing so much better than last year, so am hopeful. The basil is coming along well, as usual. The first flush of blackberries have been eaten by me, the next should be in a month or so., Still nibbling on raspberries daily.
@Pooky1 I keep thinking about your over thirty tomato plants, must be a sight to see, lots of hard work ahead for you. ![]()

109 today in sunny Az. went grocery shopping then drive thru Mc D's ( once in awhile) Living here for over 13yrs you would think I would be use to it. The grocery shopping & I did vacuum is it for me today. Sandwiches for dinner. Oh I did drown the flower pots outside the patio, not a good time to replant anything. We usually will start in Oct. Forget planting veggies just easier to buy them.

@sissel---HI ! I could live there for 113 years and I would never get used to the 109*.......I am a New England girl who loves the cold and despises the heat.
Last night I had one of my favorite things......the 4 for 4 from Wendy's..( fries, coke, chicken nuggets and Jr bacon cheeseburger all for $ 4 )
and it was delicious.
I have not been grocery shopping in forever....I do want to pick up some Italian sausage patties since I've been craving sausage " burgers" with peppers ,onions and provolone. I got a $2 bonus coupon on a bowl of soup from Panera so I might run out and get a bowl of summer corn chowder.

@Pooky1 Yes, I know Maria is Italian, and if I didn't, I would have suspected when you said she would be canning tomatoes, a big tradition in Italy. I thought about getting a meat grinder, but decided that for our needs, a processor or Vitamix was enough.

Just hubby and me in the house, so we had slaw dogs and fried potatoes for supper.
Trucker girl should be home by bedtime tomorrow, so I’ve got a large beef roast thawing in the fridge to cook on Monday.
