Re: What’s Cooking in January 2022?

  • Mamaslittlepotato. That sounds like my kind of meal.it sounds delicious. Cold and windy today. Ria made a big pan of chicken and rice soup and today she made taco meat .enough for a couple nights meals of tacos and she cut green squash into round slices and she breaded them but not with bread crumbs she used taco shells in the food processor so she could use them as bread crumbs and she added taco seasoning and fried them. They came out so good. Nice and crispy from the taco shell crumbs. This was the first time making them. Well worth it. I hope you all are doing well and eating well and staying warm and cozy at home.

Re: What’s Cooking in January 2022?

Herb roasted chicken, mashed potatoes and roasted carrots. Slathered in gravy. This is a twice monthly meal my husband and sons want me to cook. Easy enough to make, but my goodness I dirty a lot of dishes/pans in the process. Smiley Happy

Re: What’s Cooking in January 2022?

Hope everyone is staying warm & safe from the snow & ice. Tonight we are eating meatloaf, mashed potatoes, peas & carrots. I am going to make an apple & pear crisp to be topped with a scoop of vanilla ice cream. Planning on Italian sausages & peppers in sauce in slow cooker. Some coleslaw & chips on the side.for tomorrow or Sunday. DH & DS will be watching the Packers game tomorrow evening so we may just snack away on a smorgasbord of treats still to be determined! Enjoy a restful & peaceful weekend!

Re: What’s Cooking in January 2022?

We've kinda switched things around here.  DH and I decided to start eating our larger meals at noonish and then something small later on at a traditional dinner time.  The other day, we had steak.  Today, we had a big tossed salad with the leftover steak,  It's  always good and filling.

It's a cold day here, glad I didn't have to leave the house for anything.  I'm enjoying a wonderful fire in our fireplace.  Everybody stay warm!

Re: What’s Cooking in January 2022?

Beef bbq from Sundays roast, slaw, and I sliced leftover baked potatoes and fried them in butter for our supper.   Yummy, and all gone!

Yesterdays baked chicken will be used for quesadillas tomorrow.

Good evening everyone. Nice day but really cold today. Today we had leftover chicken and rice soup. A couple days ago I made teronne.an Italian candy with almonds and hazelnuts. Tonight Ria made pepperoni pizza and I made peanut butter cookies.  All was very good. Have a great weekend everyone.

Re: What’s Cooking in January 2022?

I thawed some wings overnight and now they're rinsed and drying in the fridge, to be air fried  and dressed with homemade Buffalo sauce later on. I just put together a broccoli cauliflower salad for our side dish, but I'll also put out celery & bleu cheese dressing.
