Okay, this is not healthy, but you didn't say it had to be, just low prep.

Recipe: 1 bag of Ruffles Sour Cream and Onion potato chips (the ridges hold more stuff) + a good French onion dip.

Directions: Tear open bag of chips, remove lid from dip (or make own), insert chip in dip, eat.

** The healthier way would be to keep some baby carrots and a few celery sticks nearby.... just in case. Smile

This totally works for me - and I've been known to do it (although I get the plain Ruffles and use Axelrod's sour cream and onion dip - heaven).

One of my favorite recipes is for salmon. Make a 50/50 blend of mayo and a really good grainy mustard: feel free to alter the proportions to suit your taste. Spread on salmon and bake.(I always have to look up the temperature. I think it's 450 and ten minutes an inch, but don't take my word on that!)

There was a show on Food Network that was called "Five Ingredient Dinners" or something like that. She had some wonderful recipes. One of my favorites was a turkey meatloaf, but you could use what you like. I don't remember the name of the host, but if you Google the above, I am sure you will find something.

I made the salmon last night and it was great....used an herb mustard I bought at Aldi's....thank you for posting.

This is not my recipe, but from a QVC poster years ago and it has become a staple with ham steaks.....it's scalloped potatoes....slice potatoes thinly enough to fill a 2 quart casserole....put salt and ground black pepper to taste in.......pour in a pint of heavy cream ....it should fill the casserole and leave about an inch of potatoes on the surface.....bake in a 350 oven for about an hour and half (time depends on the potatoes you are using)....or until potatoes are tender and golden on top....let stand for 10 minutes and serve.....just 2 ingredients make these really creamy good.

smoothies are my quickest meal, gather some frozen fruit, fresh spinach or romaine, almond milk or coconut water, blend, pour. My other quick meal would be a salad, but you do need to cut the veggies or fruit that go into it, still only takes less than 10 minutes.

That herb mustard from Aldi's is great. I was recently on a river cruise in Europe and they served that same mustard.

Meatloaf: Take some good ground beef, pour in some salsa, smoosh up, put in a loaf pan and bake until nearly done (375? Close to an hour?). When browned on top, spread some catsup on top and bake a little longer. WONDERFUL!

Tuna Potato Chip casserole: Cream of mushroom soup, tablespoon of white wine or vermouth, a little water, can of tuna drained, and a handful of potato chips (Ruffels are best!)-stir and pour into a casserole dish. Bake 'til bubbly. You can put some crushed chips on top if you like. That was our college favorite. You DID NOT say these had to be healthy.
