Re: What cooking this december?

[ Edited ]

We made it to 63* yesterday afternoon.  Besides a couple of heavy downpours, we had a tornado warning.  Just crazy for December in the Midwest.  I woke up to a dusting of snow, 15*, and the windchill has it feeling like -8*.

We're walking at 11:00.  Neither of us feel like eating much.  I have some soup to warm up and then a zero sugar yogurt for dessert.

Stay warm, y'all!

Made the Precooked Lamb Shanks in Rosemary Mint sause last evening.  They were delicious and I have lots left over.

Rosemary isn't my favorite spice for lamb, garlic is, but I enjoyed eating it!  Didn't use any extra sauce, just what stuck to the meat!

One shank was enough for 3 meals easy!  Meat was very tender and really delicious!  Glad I tried them!  Will get them again if offered!

Baked Sweet Potato which went with them nicely!

Good morning everyone. Just had a few Christmas cookies for breakfast. Yestauday I made shepards pie for dinner and enough for a few meals. It was 50 out yesterday and raining and today is sunny and in the 20s and very windy. Have a great day everyone.

Re: What cooking this december?

It's a cold one out there.  Snow is in the forecast for later tonight but it'll just blow around, no real accumulation expected.

DH and I have hair appointments today.  We'll do those postponed errands while we're out. I have boneless skinless chicken breasts thawed.  I will season and grill them then top with leftover sauteed mushrooms and mozzarella cheese and remain on the grill until melted. I'll make some over roasted broccoli to go with it.

Re: What cooking this december?

Pulling leftover lasagna from the freezer.  Salad and garlic bread.
A friend gave us some apricot and a nut roll, so we have had some a few days.

Cold here in the 20's, but wind yesterday was about 40-45 MPH.  Hope the winds calm down.  Expected snow today and tomorrow, but less than 3 inches.  Whew.  Some of you really got a lot!

Re: What cooking this december?

The past couple of days I did home baked bread and mushroom soup and veggie pot pie and mashed sweet potatoes with honey cinnamon roasted almonds as a snack.

Have a great day!

Re: What cooking this december?

We ended up with a little snow accumulation overnight, more than expected.  It'll be gone next week when we approach the mid 40's again.

DH and I are going back to the restaurant that has the igloos for a 5:00 dinner. We're eating inside this time.  When we were there before Christmas we overdid it. Tonight we're each ordering our favorites ala carte, their naked deep fried wings w/choice of sauce (parmesan garlic butter and traditional buffalo for me) and their famous Brussels sprouts.  Then back home to get comfy with a fire and watch tv.

Celebrate safely tonight! 🎉🥳
