I've made a pumpkin cheesecake with gingersnaps & cinnamon graham cracker crust. (Oh my how the house smells unbelievable).
I also make my mother's Pecan Puff cookies (probably what Mexican Wedding cookies and the like are). I cannot stand these but it smells like christmas to me and I won't eat them so no weight gain from them.
To the poster who is diabetic, I admire your strength. I've been type 2 and overweight for a long time. Obviously I don't deprive myself (being overweight still). I justify too much.

My BF is being more careful w/his diabetic diet now so...........
Reduced sugar, no corn syrup, pecan pie
pumpkin cake (my own recipe - 1 can pumpkin, 1 box sugar free cake mix and 1.5x spices from pie recipe from pumpkin can)
crostata w/sugar free apple pie filling

@NickNack When I was still working at school, one of the families gave me those treats made with saltines as a Christmas gift....they were delicious! I’ve never made them....knew I would do major damage to my diet if I did!!

I used to make my own chocolate candy every year with all kinds of fillings.
Granddaughter has a nut allergy so we made chocolate covered pretzels and candies with Rice Krispies inside (tastes like Nestles Crunch) and that was it.
We both had a blast though......and packaged them up in little decorative bags for her to give to her Aunts & Uncles..

maria baked 12 different cookies. peanutbutter blossoms butter balls thumb prints cookies in 2 flavors italian s prune filled cookies magic bars red and green crackle cookies peanutbutter balls dipped in chocolate 2 kinds of wine biscuits cinimon twist eggnog cookies she baked for 5 days. i put cookies in and out of oven and kept up with dishes.

40 saltine crackers
1 cup butter (no substitutions)
1 cup brown sugar
1 12 oz. package chocolate morsels
Cover a 9 x 13 x 1" cookie sheet with aluminum foil. Place saltine crackers side by side. Melt 1 cup butter and add 1 cup brown sugar. Bring to a boil. Stir while boiling about 5 minutes until butter and brown sugar are completely blended. Stir constantly. Spread mixture over crackers. Bake 5 minutes at 400 degrees.
Remove from oven and pour one package of milk chocolate morsels over top. Let stand 5 minutes and spread. Refrigerate until hard. Remove foil. Break into pieces. Keep refrigerated. (Keeping them refrigerated is very important.)
I think these are absolutely delicious, and so does everyone who has had them. I don't think they taste like Heath bars, though, and I do like Heath bars.

@NickNackyears ago a coworkers wife made these for the office. I asked for recipe and she told me she could not cook and would not share her best recipe. LOL
