Pizza is my desert island food.  I love it, even though it doesn't always love me.

 

1.  NY Style, thin crust, pepperoni, Italian sausage, with sweet red peppers

 

2.  NY Style, thin crust, extra cheese

 

3.  [real] Italian style, with prosciutto, roma tomatoes and arugula

 

4.  ~ and every blue moon I like Chicago style deep dish, sausage pizza

 

This list is definitely not all inclusive, there are many more...

Videlia Onion Pie

 

YIELD Serves 6
INGREDIENTS
    • 1 1/2 cups finely crushed buttery crackers (such as Ritz crackers)
    • 6 tablespoons (3/4 stick) unsalted butter, room temperature
    • 2 cups thinly sliced Vidalia onions or other sweet onions
    • 3/4 cup milk (do not use low-fat or nonfat)
    • 2 eggs
    • 3/4 teaspoon salt
    • 3/4 cup packed grated sharp cheddar cheese (about 3 ounces)
    • Paprika
    • Chopped fresh parsley
 
 
PREPARATION
    1. Preheat oven to 350°F. Mix crackers and 4 tablespoons butter in bowl until well blended. Press mixture on bottom and 1 inch up sides of 8-inch pie plate.
    2. Melt remaining 2 tablespoons butter in heavy medium skillet over medium heat. Add onions and sauté until tender, about 12 minutes. Arrange onions in cracker crust. Beat milk, eggs and salt in medium bowl until blended. Season with pepper. Pour egg mixture over onions in crust. Sprinkle cheese over filling. Sprinkle with paprika.
    3. Bake pie until knife inserted into center comes out clean, about 35 minutes. Garnish with parsley and serve.

This time of year, I love my own homemade mozz, parm, tomato, basil. But other times, I love wood-fired white pies with veggies; or, let's face it, any thin crust wood fired pizza.

We just recently tried the frozen Kirkland brand pepperoni, 4 to a box, for about $12.00... they are great, thin, tasty crust, & plenty of pepperoni...a nice lunch once in a while..they also have a cheese flavor.

My pizza choice hasn't changed since I was a teen.  Light sauce, pepperoni and mushrooms, with a chewy crust.
