I thinly slice all varietys of squash, sweet onions, bell peppers, and mushrooms. I sautee with olive oil and simmer in worcheschire sauce with a touch of soy! Mmmmmm!

Sometimes after the veg is roasted I drizzle some balsamic vinegar over them , yum.

Most of the time, I oven roast single veggies. I/we eat a lot of Brussels sprouts. broccoli, and asparagus. I use a little EVOO or avocado oil, salt, pepper, sometimes a little garlic powder. I prefer fresh green beans to be steamed rather that roasted. In the fall, though, I will make ratatouille with a mix of eggplant, zucchini, onions, peppers, grape tomatoes, maybe include mushrooms if I have them. .

I'm lazy. I use the Fresh Success products when I roast potatoes which I eat several times a week. They have mixtures for all veggies.

I put in whatever is in the fridge and looks good!
A little off topic but Le Sueur green beans in the can are very good--we think. They are different from any other green bean in a can I've ever had.

I do this for potatoes, fresh green beans that have been steamed, asparagus, burssel sprouts, broccoli, mushrooms and zucchini. Put them in a secure lidded container, add EVO, Italian seasoning, a good dry grated cheese and shake to mix well then roast 450 for 20 minutes or more until done.

@JeanLouiseFinch how do you make your sauce for your ratatouille? what spices and tomato base do you use? I've had it several times at restaurants and can never seem to find a good recipe to make at home.

@cindyNC My ratatouille doesn't really have a sauce per se besides the small amount of oil used, it's just a combo of roasted vegetables. After tossing the veggies in some healthy oil (EVOO or Avocado- never canola or vegetable oil), season with salt, pepper, a little garlic if you like it, and some basil or Italian seasoning. If I was going to add a sauce, I'd probably take the easy way out and use a little RAO's marinara.

I love roasted veggies. I use any veggie and put it (them) in a plastic bag with EVOO, salt, garlic pepper & a pinch of thyme. Roast until done to your liking, 20-40 mins at 400.
I live in Florida, never use the oven over 400 degrees!
Any veggie you would eat raw is 'done' when it is to your liking! Some like crisp, some like soft! Enjoy!
