Re: What Did You Have For Dinner Tonight?

Last night I made broccoli rabe with sausage, white beans, and gnocchi.  Also a native tomato salad with chopped arugula and red onion.

I hate to admit it, pizza.  That's my default when its hot out and I don't feel like cooking.

That sounds good!

Yesterday was a long day, so hubby ordered pizza and I made a tomato salad.  Tonight we're having stuffed cubanella peppers that I made a couple weeks ago.  I'm always so glad when I make extra and can pull it out of the freezer!  And more tomato salad tonight..... LOL  tomato overload here.

Re: What Did You Have For Dinner Tonight?

Following the extraction of a Wisdom Tooth at 11 am I had probiotic yoghurt, Stouffer's Mac and cheese with extra low fat cheese mixed into it, and ice cream.

Seriously, I now know why my grandchildren are willing and able to eat Mac&Cheese at least 4 times a day/7 days a week, which however is NOT ALLOWED.

The surgery was quite amazing. I was absolutely terrified, having had a ghastly experience exactly 38 years and 2 1/2 months ago (6 weeks after birthing my 2nd child), and I was so traumatized I almost refused to do it, but luckily, the surgeon was young and very skilled in both oral surgery techniques AND the psychology of squeamish patients.

Feeling fine today and very glad the job was done. And my dinner was magnifique!

Last night I made steak street tacos---marinated the sirloin steak cubes in a wonderful marinade for a few hours along with green onions of which I had 3 bunches on hand(???)---apparently I NEEDED ----that manyWoman Tongue then threw the whole thing in my airfryer, warmed up corn tortillas, chopped up avocados, warmed up jalapeno pinto beans,  made a spicy sauce to go over it all, had crisp cold wedge salad and some delicious fresh nectarines. DD took what was left to work for her lunch today---it was GOOOOOD----Woman Very Happy

Here is the marinade----got it from pinterest, I think, from Cooking Classy

3 Tbls fresh lime juice

3 Tbls olive oil

2 tsp honey

2 tsp minced garlic

1 1/2 tsp ancho chili powder *

1 tsp cumin

1 tsp salt

1 tsp pepper

Mix it together and pour over the meat.. I didn't have the ancho powder but put in a bit of cayenne. We like spicy. Reg chili pwd  would work or maybe paprika or leave it out.

Would be great on chicken or pork.

Re: What Did You Have For Dinner Tonight?

Gosh....I can't even remember what I had last night.  Tonight I'm having some leftover spaghetti that I had taken for lunch earlier in the week but didn't get to eat it for one reason or another.  I have some green beans that I've been having all week so I'll have a helping of those to go with it.

Re: What Did You Have For Dinner Tonight?

@wagirl I don't even own an air fryer yet!  We're in the process of shopping for a new range and alot of them have an air fryer option, so it will be interesting to see how that works.
