@cuddlesmama If you would like to stick with the beef, go with a rib roast. They are usually on sale this time of year. There are good recipes on all recipes dot com. It usually involves just seasoning and roasting for a short time at a very high heat and then some time at a lower heat. It takes a few hours, but you can do the sides while the meat is finishing. We go to my brother's house, so I don't have to cook, but I would do a rib roast if I had the duty.

I'm going non traditional this year and making lasagna on Christmas day. We'll do baked ham with the sides for Christmas Eve.

My family always gets tamales, beans, rice and hot sauce from a local Mexican restaurant a day or two before Christmas. Then we just reheat them for dinner. Easy and delicious.

Nothing. I'm hoping to heat up leftover pizza.

We're doing a standing rib roast on the rotisserie, an already frozen hash brown casserole, rolls and roasted brussels sprouts. Up in the air about dessert.

I'm going out for dinner but...... (if I wanted a safe meat with minimum fuss) I'd go with ham. Lots of options for leftovers too.

Prime rib, baked potato (lots of optional toppings - sour cream, shredded cheese, chives, compound butters, chopped bacon bits, etc.), wild rice, Caesar salad, and chocolate bundt cake. Easy & good.

I'm feeling a little Grinch-like because a family member pushed us into hosting the family gathering again this year (40 to 50 guests). Sure, we could have said no, but then the tradition of gathering at a sibling's house for Christmas would be broken. It's just that we held Thanksgiving, and frankly, it costs a lot to feed so many. I'll make two hams, hot beef, corn casserole and macaroni & cheese. Guests will provide snacks and desserts (I hope). We provide the drinks too.
