@CalminHeart  My Mom did the same for mashed potatoes and added a little chopped onion to them.  I have tried to make them, but mine did not turn out right.  Think she floured to make a crust, but I'm not sure

Back when I was a kid, people used lard to fry food and it made everything crisp on the outside. I have never used it but it was cheap and common in the 50s and 60s.

I always laugh when I see people don't eat leftovers. Well, you wouldn't be eating at all in my home. When I make a meal we eat it for days after to finish it up. Most of the time it tastes better. We just finished off my spaghetti dinner that we ate for a solid week.... 7 days! It was delicious!!

I divvy up leftovers into Pyrex meal-sized containers for DH. I stack them in the frig or else freeze them so he can pop them into the microwave for a quick lunch or dinner if I'm not around. Nothing goes to waste.

My mom used to fry those leftover mashed potato patties too. Woman Happy

@Desertdi   My husband would have starved or cooked his own meals, if he would not eat leftovers.

Re: WONDERING ABOUT YOUR LEFTOVERS...

My late DH didn't mind leftovers, either did my kids when they were home,

Sometimes I made extra meatballs when we spaghetti and used them for meatball subs.  Extra roast beef or prok became hot rb/pork sandwiches etc.

If I did all the grocery shopping, prep and cooking you bet your bippy I had leftovers and used them

My feeling was the person who bi*ches about leftovers  cooks.

Re: WONDERING ABOUT YOUR LEFTOVERS...

We eat leftovers for another meal or if it's a lot one of my kids will come by and get them.  A lot of our meals I will make more to give to them.  It's just DH and myself.  Many times if I am browning ground beef I will freeze to use for tacos or mix in with spaghetti sauce.  Food is too expensive for us to waste.
