Re: WHATS COOKING iN THIS MONTH OF APRIL?

@lynnie61, that cheeseburger sounds delicious & easy to make. Definitely will try it for DH & DS tomorrow.

No cooking tonite. DH is going to a fishing club meeting. I baked brownies for him to share.

Absolutely gorgeous here today! Sun, gentle cool breeze. But storms possibly tonight. Have a good day!

Re: WHATS COOKING iN THIS MONTH OF APRIL?

Made a Pot Roast yesterday anticipating some warmer weather this week aka no cooking days.

Had some beautiful fresh local scallops for Saturday's dinner, made a scallop and sherry casserole w/ cracker crumb and parm topping..served with roasted sweet potatoes. Cut them in half lengthwise and brushed with EVOO and sea salt, roasted cut side down. mmm Heaven !

There's a lot of rain in the forecast this week.  It's darkening up and should start shortly, but will only last a couple of hours this morning then be nice the rest of the day.  This afternoon we're doing our big shopping trip so I've been working on my lists.

On Sunday, I ordered a couple of Baggallini purses and some flavored coffee from the Costco website.  This was in the coffee description: toasted almond, caramel and silky chocolate.  I drink flavored coffees most of the time so I'm looking forward to it being delivered today and making a pot tomorrow.  DH is a regular coffee drinker but said he'd try this one.  The purses haven't shipped yet but the labels have been created so they'll probably be here by the end of the week.

Small ribeyes are thawed for today's lunch. We'll also have a fried egg on the side and some roasted fresh asparagus.

ETA - well, everything changed a few minutes after I posted.  DH has to go into the office so I made him steak & eggs as breakfast.  I'll still eat later.  Shopping postponed until tomorrow.

Making chicken stir fry today, with broccoli, mushrooms, red peppers, and zucchini. We will have it over brown rice. Beautiful day here going to 77, but forecast of rain all week.

Re: WHATS COOKING iN THIS MONTH OF APRIL?

Good afternoon everyone. Sunny and in the 80s. To warm for me. This week I made on Monday beef chowmain over rice enough for a few meals and I cooked shaved steak and mushrooms for quesadillas for a couple meals. I will make the quesadillas on the night where eating them. Well I went to use the be microwave oven and noticed it died. In the last 6 years this is the fourth microwave oven. We use to have one for years. No more. Now there disposable. I know no what's causing my back pain. 3 bulging discs pushing on the nerve causing pain. I have an appointment with the back surgeon may 22nd.  Have a great rest of the day everyone.
