Re: WHATS COOKING iN THIS MONTH OF APRIL?

@ JeanLouiseFinch, I feel the same way about the ham. I put some in the freezer for lentil soup or omelettes. We are finishing the rest up at lunch. Tonight I am making salads with grilled shrimp, balsamic vinaigrette and bleu cheese crumbles. Have a great day everyone.

Re: WHATS COOKING iN THIS MONTH OF APRIL?

DH and I attended a concert last night and have another one tonight.  I haven't put much thought into lunch but there are chicken breasts leftover from Thursday so I'll probably warm them up and roast some fresh asparagus.

Re: WHATS COOKING iN THIS MONTH OF APRIL?

We picking up our grocery order today. On the menu this week is swordfish with a caper, tomato and bell pepper relish and a side of butter and garlic rice; chicken salad with dried cherries, mandarin oranges, blue cheese and balasmic vinegarette; steak quesadillas; spaghetti with Rao's sauce.

I am getting more and more frustrated with our health care system.  My youngest DD still doesn't have any answers as to why she is fainting.  Thankfully it has only happened twice since she lost her job at Starbucks but before she gets a new job we would like to know if she has POTS or not.  She has an appointment with her neurologist on Monday so since I haven't been able to get a referral for a tilt table test from any other of her doctors we are going to ask her for one since she recommended it in the first place.  I also have been trying to get her autism specific therapy from the hospital where she was evaluated.  I requested it about a month ago and was told she was placed on a waiting list so yesterday I called to see where she is on the list.  The incompetent receptionist told me she needs a referral and didn't seem to grasp that the psychologist that evaluated her recommended it so couldn't she make the referral since the psychologist is part of the hospital system.  I got no where with her so I will be calling back on Wednesday when the office manager returns from vacation.

@ninjawife, your menu for the week ahead looks wonderful.

I sure do understand your frustration with the health care system. It seems no one listens and they send you all over the place.

Re: WHATS COOKING iN THIS MONTH OF APRIL?

Hubby is making chicken on the grill & I will cook some broccoli & rice.

Oh how I wish I could eat! I have a check up on Wed. & pray they will remove the feeding tube. Then I can move onto liquids & slowly onto more substantial food.

@ninjawife, I am sorry that you and your DD are having such difficulty getting the testing and care she needs. Hope it will come very soon.
