Re: WHATS COOKING iN THIS MONTH OF APRIL?

Happy Easter everyone!  Oldest DD and her dog came to visit this weekend.  Friday was her birthday and she requested we go to out for dinner to a restaurant that serves small plates.  We shared plates of scottish salmon rolls, ham & cheese coquettes, burrata poptarts, fusilloni pasta, veal cheek and lamb chop.  I had affogato for dessert.

Today we had brunch at a relatively new French restaurant which we have had great dinners at.  Brunch was even better.  We shared a salmon tartar, pecan roll and glazed bacon.  I had a chocolate buckwheat crepe with caramel ganache and bruleed banana.

For dinner we are having traditional ham, potato salad and green beans.

[ Edited ]

I shopped for Easter dinner groceries , anticipating some extended family would come.  Ultimately it was just our immediate family.  That meant we had a lot of leftovers for our kids to take home.  They divvied up just about all of it.  I kept a little of the onions and enough ham for a few meals.  We'll have some this week and I'll dice some up and freeze it for a future casserole.

It's Fasting Monday.

Tonight I am making breaded chicken breasts, long grain rice and green beans. Cold and windy, only 34 degrees here.

Meatloaf, mashed potatoes and broccoli for dinner. We had a light coating of snow, and only 29 degrees. I am ready for spring!

@Pooky1 .....   My family is from Ascoli Piceno in the Marche region of Italy.  I am not surprised your mother-in-law never heard of them.  Very specific to Ascoli.

I think Itri is not far from Rome.  I have two first cousins who live it Rome.

Have no idea why your mother-in-law's Easter bread didn't rise.

Hope your surgery goes well.

The carpet guys came to measure today.  Now we just have to make up our minds on what we want and get the ball rolling.  They are scheduling about 3 weeks out.  I hate the thought of moving furniture.

We had some of the Easter leftovers for lunch.

Hot dogs, Cole slaw and part of an apricot roll a friend shared on Easter. Homemade and delicious!  She makes wonderful apricot and nuts rolls.
