WHATS COOKING iN THIS MONTH OF APRIL?

Good evening everyone. I'm getting April started tonight. Showers this morning and partly sunny today MD showes next few day's. First 3 ******  months are almost behind us I made tacos and rice for dinner tonight. Have a great night everyone.

I just finished a stufffed artichoke I made tonight...yum...tender and sweet. 

 

Also heating up a little pasta to eat with some leftover bay scallops we had out the other night.

 

That's it for tonight...have a good night.

 

ps. Of course you had tacos..."Taco Tuesday." I've never once made tacos at home! I should some time try it!

@ amyb, We haven't had stuffed artichokes in a long time. When my mother was alive she made them 3 or 4 times a year and they were delicious. I think I will make them for Easter. Thanks for the idea.

Glad I inspired you to make them for Easter, they're a perfect addition to an Easter menu, and very seasonal this time of year. I hope you enjoy them. I'll teach you what my mother always stressed to me..."Look for the 'female', ie. the ones with the more rounded and not pointed tops, they are more tender and sweet!!" And she is right...they are.

 

When I see good ones or good priced ones in the store I pick them up and make them occasionally, throughout the year...sometimes they're so filling it might be all I'll have for dinner, or other times, like last night, with a light side of pasta or some protein.

One of our living room chairs broke right before we left on our trip.  This morning DH got it down to the curb as it's trash day.  It's also raining 🙄. I hope the garbage men take it. 🤞

 

We're getting ready to do a little redecorating, still in the planning stages.  Whenever we do a home project it seems to take on a life of its own.  We started thinking about replacing carpet in the LR, DR, and FR, then that made me think we should paint now too.  Then we thought about redoing the kitchen floor.  We can't do it all at once so the kitchen floor will probably have to wait a little while.  I plan to refinish our kitchen table and paint two stand up floor cabinets we have in there too.  I can do those anytime as long as the weather cooperates because I do it in the garage.  As much as the carpet replacement needs to be done, I hate the thought of emptying the cabinets, having boxes in the way and moving furniture.  Our dining room hutch is so heavy. DH and I did it last time but this time I think we'll need help.  We're moving the dining room set and hutch to the garage and will not bring it back inside.  We will try to sell it.  I would give it away just to be rid of it but DH thinks we can get a few bucks for it.  I want to replace it with something more simple.  The carpet guy will be here next week to measure.  

 

I thawed a couple of Rastelli steak burgers and will make bacon cheeseburgers topped with a fried egg for lunch. I'll dress mine with a slice of tomato, a thin slice of red onion, dill slices and a little KF ketchup.  I'll have some raw veggies on the side.

Just after 12:00 and a meatloaf is cooling on my stove; supper will be ready when I'm ready to eat.  Potatoes are peeled and ready to cook and there are green beans in the refrigerator.  

 

Since I don't cook as often these days, I don't have many leftovers to rely on for a quick meal.  I've eaten more cereal in the last 14 months than in my entire life, because the day has passed, I'm really hungry and my decision is to wait up to 45 minutes for a frozen entree to cook or eat cereal, and I choose cereal.   Tonight I am actually prepared!

Made a "kitchen sink" veggie soup today, with all the veggies in my fridge and freezer, some ditallini pasta and egg drop in it. Very good. Had it for lunch and dinner! Had a half sandwich, on the side, for dinner. Easy, no fuss stuff...and nice on this rainy evening.
