Vidalia Onions in season are plentiful here and available everywhere.  I buy them and store them in my basement for months.

 

i love them on the grill and I make French onion soup with them.

We cook (low frying pan covered) them with fresh mushrooms, and  half a stick of butter, a little soy, and about 1/3 cup of wine.

 

They're great over any meat and baked potatoes.

Vidalia Onion Pie  Yum!

DIRECTIONS
  1. Mix Ritz cracker crumbs and melted butter.
  2. Press mixture into an 8-inch pie plate.
  3. Saute onions with 2 T butter until clear, not brown; spoon into pie crust.
  4. Beat eggs with milk, salt, and pepper and pour over onions.
  5. Sprinkle with cheese and paprika.
  6. Bake at 350 degrees F for 30 minutes or until firm in the center.
